This dish is a blend of both Asian and Western techniques and flavours, and has been refined over a period of time. My objective was to end up with a layering of textures and flavours that built up from firm and sweet to soft and creamy. If there is one thing Eastern cooking has taught me, it is the balance and interplay of flavours from strong to subtle.
This recipe also uses extra-virgin olive oil alongside tamarind, soy sauce and palm sugar to achieve a full-flavoured dressing that melds all parts of the composite salad together. When cooking Thai and Chinese food it is imperative not to use olive oil as it masks the authentic flavours, but once you understand the balance of these flavours you can start to blend with sympathy, and to create dishes that are in harmony with both their roots. The key to this salad is the same as for any composite salad; all the parts must be of the highest quality. The mangoes should be ripe but not overly sweet and soft. The chicken cannot be compromised, it must be fresh to achieve the right texture. Ensure that all the ingredients are at room temperature. It is ideal if all the preparation is done on the same day, but if that's impossible make sure you take everything out of the fridge well beforehand.
Southwest Chicken Salad with Rice, Corn, and Chilies
If you're short on time, use a roast chicken from the supermarket instead of grilling chicken breasts. Serve Mexican beers alongside and tortilla chips for extra crunch.

Herbal Soup
When I was growing up, my mom periodically brewed a pot of this bitter, allegedly medicinal soup and forced me to drink a bowl (she says the ginseng promotes general well-being). Although I used to sit at the kitchen table for an hour, slowly spooning each dreadful bit into my mouth, I've since discovered that the only way to tolerate it is to gulp the liquid down as quickly as possible. Now nearly every time I go home, she prepares this special (and unfortunately simple-to-make) soup just for me — which probably explains why I don't go home very often.
Chicken Sauté with Guava Sauce
LaVerl Daily, director of Le Panier cooking school in Houston, suggests supplementing this slightly tropical entrée with rice, black beans and buttered green beans sprinkled with chopped macadamia nuts. Finish with sweet potato pie or coconut cream pie.

Grilled Chicken with Olive Purée
The versatile, easy-to-make puree, in this recipe also adds terrific flavor to sandwiches, pizzas and pastas. Olivada is an olive spread, sometimes called black olive cream, and is available at Italian Markets, specialty foods stores and some supermarkets.
Chicken with Ham, Fennel and Orange
For a casual supper, broil rounds of prepared polenta roll, and toss romaine lettuce with oil and vinegar; end with cheesecake. For a special dinner, have broccoli spears with browned butter and orzo pilaf with Parmesan. Buy a hazelnut dacquoise or other fancy cake from the bakery for a great dessert.
