I have written a recipe for panettone dressing before: the sweet seasonal fruit bread was cubed, toasted, and mixed with Italian sausage; this is very different, not least because I see it not as an accompaniment to turkey (which has its own interior stuffing) but to be served, at parties or over cocktails, in small squares, like savory brownies. As ever, feel free to substitute the plainer pandoro if you wish, though I do think the rich fruitiness is part of this unconventional appetizer's charm.

Soufflé of Puff Pastry with Orange-Scented Pastry Cream, Candied Pecans, and Caramel Butter Sauce

Daniel Boulud always had a preference for classic French desserts, so I developed this recipe for the lunch menu when I was pastry chef at Daniel. The dessert itself is very simple: We bake an undocked, thick round of puff pastry, letting it puff up high, and serve it hot, filled with Orange-Scented Pastry Cream and topped with a buttery caramel sauce and a few Candied Pecans. The puff pastry rounds should be baked à la minute, never ahead of time, though the dough can be rolled out and cut in advance, and stored, covered, in the refrigerator for up to a day. Sometimes the best desserts are the simplest.

Celeriac Remoulade

This remoulade is a classic French dish and makes perfect use of an under-used vegetable. Choose from capers, parsley or gherkins (or any combination of all three), to add flavour and a pretty hint of green. The celeriac will discolour and brown as soon as it is peeled and sliced, so either use it straight away or soak it in water with lemon juice added, for up to 1 hour before using.

Praline French Toast Bread Pudding

"This is as good as it gets!" Alan exclaimed as he took his fourth forkful of this creation, followed by a fifth. Picture a warm, creamy, puffy bread pudding, straight from the oven, that tastes like it was made in a praline confectionery shop in New Orleans. You start with a loaf of challah, cut it into thick slices, and pour over a rich, creamy custard. Marble it with a buttery brown-sugar praline crunch filled with pecans and flavored with cinnamon. The secret is to refrigerate the pudding for several hours or overnight before baking; it's the long soak that makes this bread pudding the best you've ever tasted!

seeds are a very good source of manganese and copper and a good source of protein, calcium, magnesium, iron, phosphorus, vitamin B1, zinc, and dietary fiber. Further, they contain two special types of fiber, sesamin and sesamolin, which are members of the lignans group and can lower "bad" cholesterol and help prevent high blood pressure. And did I mention chocolate? Namely, raw chocolate drizzle? Sesame seeds plus raw chocolate drizzle equals crazy good.

5-Minute Protein Truffles

These protein "truffles" are so ridiculously easy that I feel somewhat silly adding them to this collection. Then again, my super-simple, silly recipes are often my most popular. They are certainly favorites in my repertoire, in large part because of their fast factor, but also because of their portability and candy-like appeal. Plus, they are endlessly customizable by varying the spices, extracts, and other add-ins, or by giving them a chic coating of chia seeds, cocoa powder, or chopped nuts. Who says pretty and power can’t go together?

Sweet Potato–Chickpea-Quinoa Burgers

Vegan When it comes to sweet potatoes, American cuisine needs some imagination, and these irresistible burgers are here to help. Just throw a cooked sweet potato into your trusty food processor, along with chickpeas, scallions, and spices, and buzz it into orange tastiness. Two complementary iterations of quinoa (whole cooked grains and flour) step in to balance the sweetness—and also to hold the burgers together—while upping the protein and calcium content. Green pea polka dots round it out in every way, making this taste and color fest even more fun and interesting. • Be sure to use the moist, orange variety of sweet potato (not the drier, starchier white type). • Regarding the quinoa flour: Don't panic. Just get out the inexpensive electric coffee grinder that you dedicated to spice grinding, wipe it out thoroughly, and add 6 tablespoons of whole quinoa. Buzz for less than 5 seconds, and you've got your ingredient—probably slightly more than the amount you'll need for the recipe. • If you're using fresh peas, they'll need to be steamed or blanched for about 5 minutes. Frozen ones require only to be defrosted in a strainer— a brief encounter with room-temperature tap water, then a shake to dry. Either of these steps can be done ahead. • Begin cooking the sweet potato well ahead of time, so it can cool before you assemble the batter. This is also a good use for leftover plain mashed sweet potatoes. You'll need 2 cups. • Toasting cumin seeds is most easily done in a small, dry skillet over low heat. Shake the pan as you go and pay careful attention. It takes only a few minutes to toast them—and a blink of an eye beyond that to irreparably burn them. You can use the same pan (and same method) to toast the peanuts, if you wish. • If you're cooking the burgers in batches, keep the finished ones warm on a baking sheet or an ovenproof plate in a 250°F oven while you make the rest. • These freeze and reheat beautifully after they've been cooked.

Coconut-Mango Rice Noodle Salad

Vegan Green beans, cashews, mint, carrot, cucumber, and lime shine through the pearly noodles in this pretty, uplifting dish. The noodles will seem undercooked at first, but they will soften as they absorb the marinade and the moisture from the other ingredients. If you cook them all the way, the finished dish will be mushy. • Rice noodles of various thickness can be purchased inexpensively in most Asian-themed grocery stores, some supermarkets, and online. Use medium-thin ones for this recipe. • You can freeze the unused coconut milk in an ice cube tray, then transfer the cubes to a heavy plastic zip-style bag for making this (or something else) in the future. Don't forget to label the bag. • This tastes best within a few hours of being assembled, so plan accordingly. • Make sure the cucumber is sweet.

California Barley Bowl with Lemony Yogurt Sauce

If you grew up in Northern California in the 1990s, you lived through the trend that was sprouts. From alfalfa sprouts to bean sprouts, they seemed to find their way into every green salad, sandwich, and omelet. This savory whole-grain breakfast bowl is inspired by those California days, with chunks of ripe avocado, crumbled Cotija cheese, toasty almonds, and a citrus-sparked yogurt sauce. While alfalfa sprouts were prevalent when I was growing up, today I try to branch out, using a tangle of colorful bean sprouts or more delicate radish or sunflower sprouts. These morning bowls couldn't be easier to prepare, but the barley does take a while to cook; I put a pot on the stove first thing in the morning so it'll be ready by the time I've had my coffee and prepped the other ingredients. Feel free to experiment with other grains, too. I've tried this with both quinoa and farro, and it's as wonderful with delicate grains as it is with heartier ones. Morning Notes: Cotija cheese is popular in Mexican and Latin dishes. It's a firm, crumbly cheese made of cow's milk and is used so often because it's milder than feta or even goat cheese and softens with heat but doesn't fully melt. You can also use queso fresco if it's easier to find.
