Zerde
A lovely yellow rice pudding, with the exotic flavor of saffron; interestingly, it’s dairy free. Use cinnamon or cardamom in addition to (or in place of) the rose water (available in small bottles at Middle Eastern stores) if you like.
Basbousa
Something between pudding and cake, basbousa is popular throughout the Middle East. It’s always drenched in sugar syrup and often topped with fresh whipped cream. Rose water (sold in small bottles at Middle Eastern stores; it keeps indefinitely) is an odd ingredient, a lovely flavor that can quickly become overpowering. Use it judiciously.
Seffa
Not unlike rice pudding, this couscous dessert is found throughout the Middle East and North Africa. Scent it with a few drops of rose water (available at Middle Eastern stores) or orange-flower water in place of the cinnamon if you like. Until recently, the topping for seffa was a thick sugar syrup, like that used on basbousa (preceding recipe). But more and more you see it without syrup or with a substitute like almond milk, which is very good.
Braided Coffee Cake with Cardamom
This is what I think of as real coffee cake—not extraordinarily sweet and for some people not even a dessert. If you want it more cakelike, double the sugar in the dough and consider adding a couple more tablespoons of butter. But this is wonderful with a cup of coffee in the afternoon or toasted, with a little butter, in the morning. With the food processor, this dough becomes quite quick to make; just keep the processing to a minimum. You want to avoid building up the gluten in the flour so it doesn’t become tough. If you don’t feel like braiding the dough (it really is fun, though, and takes only a few extra minutes), by all means bake this in a loaf pan.
Trifle
Trifles are anything but trifles: they take a good deal of work to put together, they’re about as caloric as desserts get, and, in the right serving vessel—like a large glass dish with tall, straight sides that reveals the tempting layers of cake, cream, fruit—they’re absolute showstoppers. In England, one is often wowed by the guiltless and masterful employment of loads of cream in many desserts. Trifles are a showcase for the British love of cream—in this case both whipped and pastry.
Paskha
Traditionally paskha is not cooked but put in a special pyramid-shaped mold, weighted, and drained in the fridge for a day or so. But given people’s concerns about raw eggs, and since baking is a legitimate alternative, I make a baked version, which is just as good (and actually keeps longer).
Tuiles or Mandelflarn
Tuiles are better known, but the same cookies are popular in Sweden. You can make them without almonds, but unless you have allergies I don’t know why you would. Great alone or with ice cream or fruit.
Orange-Nut Biscotti
The familiar zwiebacklike cookie originated not at Starbucks but in Italy, where it is nowhere near as popular as it is in the States. Still, it’s nice to have a bunch around, and they keep far better than regular cookies, up to a week in an airtight container. Increase the sugar to a cup if you like your biscotti sweet. These may be made, of course, without nuts, with lemon instead of orange, or with added ingredients like raisins or even chocolate chips.
Almond Meatballs
Unlike the preceding Italian meatballs, these are strongly flavored with garlic, contain no cheese, and are spiked with almonds. They are unusual and great served on a toothpick with a glass of sherry.
Roast Pepper Spread with Walnuts and Garlic
This stuff is great, and I have never tasted it in this country except in my own kitchen. I first had it in Turkey, where it was quite spicy, but have since learned that it’s equally acceptable milder. Dried urpa or aleppo pepper, or hot paprika, is the ideal seasoning—a bit of bite but not overwhelming—but judicious use of hot red pepper flakes is also good. You can also omit the heat entirely. This spread can be made hours or even a day in advance. Always, however, serve it at room temperature, never cold. Serve with bread or vegetable sticks; it makes a great sandwich ingredient too.
Beet Caviar
This brilliantly colored starter is an unusual and extremely elegant way of using beets. Serve it with chips, bread, or toast or as an accompaniment to any roast poultry dish. Make this ahead of time if you can; it’s best after marinating overnight.
Eggplant Caviar
Its flavor bears no resemblance to real caviar, its ingredients (except for the salt) have nothing to do with caviar, but its texture—supposedly—is akin to that of caviar. If there are enough seeds in your eggplant—not necessarily a good thing—I suppose you could argue that its graininess is like that of caviar. In any case, it’s a wonderful spread for Crostini (page 41), as a dip for fresh vegetables, or as a stuffing for roasted peppers or tomatoes (pages 492).
Spicy Fried Almonds
This is a standard at tapas bars in Spain and a perfect addition to any cocktail party. The salt will adhere to the nuts better if you grind it for a few moments in a food processor or spice or coffee grinder; this gives it a more irregular surface than it usually has.
Roasted Walnuts
Salted nuts are made wherever they’re grown and are infinitely better than nuts from a jar or can. Note that these are not fried—there is no additional oil—but roasted. This basic, easy recipe can also be used for whole almonds or hazelnuts.
Fried Peanuts
Fried peanuts will amaze your guests with their crunch and fresh, distinctive flavor. Add different kinds of nuts if you like, as long as they are “raw” to begin with (the industrial shelling process uses enough heat to cook the nuts, at least a little bit). The best raw peanuts are usually found in the fall (peanuts are an exception; the best season for other nuts is spring), when they are fresh and tender. Like any nuts, these are great with drinks, especially beer.
