Chocolate-Peanut Butter Pinwheel

My childhood memories of Christmas revolve around cookies," says Fran Gallagher Ripsom of Sun Valley, Idaho. "My mother started baking as soon as Thanksgiving was over. She prided herself on a beautiful assortment, never less than 12 kinds of cookies. Some became traditions, but she also tried new recipes. I loved the pinwheel cookies. I often bake them at other times of the year, because they are too delicious to enjoy only at Christmas."

Peanut Butter and Jelly Jewels

If you love peanut butter, these cookies will be It. I created what I believe to be quintessential peanut butter cookies to honor the one hundredth anniversary of peanut butter. They are very peanut buttery yet exceptionally light, with a lovely "sandy" bite. At my husband's urging, I doubled up on the peanut butter and decreased the flour, making the chocolate cookie centers seem like biting into a Reese's peanut butter cup. Chocolate centers blend wonderfully with the peanut flavor, but the bright, tart, sticky cherry centers, are my first choice.

Peanut Soup with Rice and Scallions

Instead of white cubes of tofu bobbing in this African-style soup, where they look decidedly odd, I purée the tofu with a portion of the finished soup until everything is smooth. The tofu is there, but it doesn't intrude. And this is a method you can use with virtually any puréed soup. If you wish, you can purée the entire soup or leave it textured, with bits of sweet potatoes and peppers.

Flourless Peanut Butter and Chocolate Chip Cookies

Separately, they are the basis of two of the nation's favorite cookies. Together, the ingredients are an unbeatable team.

Hannah's Peanut Butter and White Chocolate Candies

Sue Ellison of Edgewater, Colorado, writes: "Although I have worked for more than 20 years as an elementary-school music teacher, at this point music is just my job; cooking is my passion. It's an interest I share with my daughter, Hannah. We do a phenomenal amount of cooking together. In fact, I think she learned how to count using chocolate chips, standing on a stool next to me at the kitchen counter while I baked chocolate croissants. Now Hannah's early training is paying off: She creates new recipes often, including the peanut butter and white chocolate candies here."
