Eggplant and Oyster Rice Dressing
What northerners call stuffing, southerners call dressing. Oysters and eggplant are a classic Louisiana combination, and the bite of cayenne adds to the authenticity.

Pear Gingerbread Upside-Down Cakes
This luscious homespun treat is great with vanilla ice cream or frozen yogurt.
Chocolate Truffles with Pecans and Dried Cranberries
"The recipes here reflect my British roots, but not necessarily my family traditions," writes Mairi Morrison of London, England. "Although my mother is from Scotland and my father is from Northern Ireland, I grew up in Los Angeles, where our weeknight meals were typically American: spaghetti, tacos, and burgers. It wasn't until I moved to Europe that I became really interested in food. Here in London my social life is centered around the table. I really like this dish because it is typically British, and perfect for a rainy winter evening in London."
Make these ahead if you like (they will keep for a week in the fridge) or make them on a whim, since the recipe is so easy. Lyle's Golden Syrup is a popular British sweetener with a flavor that's similar to mild honey.
Christmas Croissant Pudding with Sour Cream and Brown Sugar Sauce
In this version of the classic holiday dessert, a croissant bread pudding is steamed in the oven instead of on the stove top. Ignite the finished product in front of the guests for maximum effect.
Maple Walnut Bûche de Noël
Cakes resembling Yule logs are very popular at Christmastime in Canada and the United States. Though you'll see them in bakery windows elaborately decorated with marzipan woodland animals and meringue mushrooms, we went with a simpler but more elegant look.

Scalloped Potatoes and Parsnips
In the following recipe, scalloped potatoes, often soaked with cream and cheese, are combined with parsnips and cooked with broth and low-fat milk instead. Though lighter, they are still delicious.
Orange Caramel Sauce with Almond Praline
A perfect double topping for ice cream or frozen yogurt. For gift giving, test program director Lane Crowther places the sauce and the praline in two separate jars, then wraps them in cellophane and ribbons. The praline can also be broken into large pieces and packaged in tins to give as candy.

Danish Diamonds
(Klejner) Every year research editor Karen Hallal serves these spiced diamond-shaped cookies for dessert on Christmas Eve. They are fried like doughnuts and coated with powdered sugar. The recipe for klejner, popular all over Scandinavia, was given to Karen by her Danish mother.
Eggnog Custards
A favorite Christmas drink is transformed into this lovely custard.
Blue Cheese and Pecan Crackers
Like savory shortbread, these are wonderful when paired with wine, salads or soups.
Goat Cheese, Artichoke, and Smoked Ham Strata
This strata is ideal for Christmas morning — it is assembled a day ahead and baked just before serving. Mimosas are a nice addition to the menu.
