Essentially a simplified sauerkraut and a very light pickle. Use good-quality soy sauce and serve this as a side dish with Japanese or other Asian food. Do not try to make this in very hot weather; fifty or sixty degrees is ideal. Other vegetables you can prepare this way: any mixture of vegetables, as in the variation.
Kimchi
Kimchi, the world’s best-known Korean ingredient, generally describes pickled vegetables, though cabbage is the most common choice. Originally a basic salt pickle, chiles were introduced in the sixteenth century, followed soon thereafter by fish or shrimp paste. Regional influences determine the level of pungency, with warmer regions producing kimchi heavily seasoned with chile powder and anchovy paste. Some take to kimchi immediately; for others it is an acquired taste. For information on nam pla (Thai fish sauce), see page 500. If you love kimchi, you’ll enjoy making this version. Even though it’s quick, the results will be as good as that found at most restaurants and better than almost any version you’ve bought in jars. Kept refrigerated, it will last for about a week. Dried salted shrimp are inexpensive and keep forever; you’ll find them at most Asian markets.
Seaweed Salad with Cucumber and Chicken or Shrimp
This is simply a kind of sea-based mesclun with a distinctively sesame-flavored dressing. Wakame, a dark green, leafy seaweed, is sold dried almost everywhere and is the most common seaweed used in salad. Other seaweeds, ranging in color from light green to bright red to black and in texture from leafy to ferny, are all fine (see page 483). At most Japanese markets and some health food stores, you can find a prepackaged assortment of seaweed salad greens; these are a little more expensive than buying individual seaweeds but will give you a good variety without a big investment.You don’t need much: an ounce of dried seaweed, or even less, is enough to make a salad for four.
Bean and Tuna Salad
This classic combination of beans and tuna is great when made with white beans that have been cooked with garlic and other spices, like White Beans with Garlic (page 441). If you use bland or canned or frozen beans, jack up the seasonings here; add, for example, a bit of garlic, some fresh thyme, and/or a little cayenne. A great picnic recipe, this can be made well in advance; note the green bean and salami variations, which are also good. Any of these salads would be great toppings for Crostini (page 41) as well.
Tabbouleh
Tabbouleh, the well-known salad that uses bulgur as its base (usually; there’s also a rice version, which I’ve included as a variation), should be dominated by its herbs, mostly parsley but also mint. You can prepare the bulgur ahead of time and toss in the herbs right before serving.
Pressed Tofu Salad
There are two keys to this salad. The first is buying dry, pressed tofu (bean curd), which is sold at most Asian food markets and some natural food stores. It’s much firmer than regular tofu and has a dense, chewy texture and a brown skin. (If you can’t find it, use extra-firm tofu and press it yourself; see page 491.) The second key is allowing the salad to marinate long enough for the tofu to absorb the dressing. That part’s easy, but it does require advance planning.
Tomato and Tapenade Salad
A simple summer salad that is best with tomatoes that have just started to ripen. You can also toss this salad into hot or leftover pasta for a quick hot dish or pasta salad.
Tomato and Onion Salad
Don’t be deceived by this salad’s simplicity: the lemon dressing and fresh herbs bring out the complex flavors of the tomatoes and onions, and if the ingredients are good, the results are practically miraculous. Note the extremely useful technique of “killing” the onions—as they say in Turkey—which you might try whenever you use raw onions, to tame their harshness. You can make this salad an hour ahead of time, refrigerate, and toss again before serving.
Chickpea Salad with Ginger
This isn’t unlike French Chickpea Salad (preceding recipe), but it has an entirely different feel; for best flavor, use young, fresh ginger if possible. Canned chickpeas work well for this dish, but, as always, freshly cooked ones are preferable. Make this salad up to two hours in advance, but no more.
Cucumber, Jicama, and Fruit Salad
The spicy sweetness of this Mexican salad is super-refreshing and delicious as long as you have ripe fruit; vary the ingredients depending on what you find. Really, any fruit is suitable, from oranges and apples to pineapples and papayas; peaches and melons are wonderful summer options.
Hoisin Chili Sauce
This is no more than hoisin sauce spiced up. It’s great with Spring Rolls (page 38) or Lumpia Rolls (page 68) and makes an acceptable substitute for Sesame-Chile Paste (page 591). Like every other bottled condiment, hoisin varies in quality: look for a jar that lists soy as the first ingredient and little more than that, sugar, chile, and spices. As for chili sauce, look for Vietnamese chili-garlic sauce, sold at almost every Asian food store; like hoisin sauce, it keeps indefinitely in your refrigerator.
Ginger-Chile Sauce
A good all-purpose fresh chile sauce, one that will keep for a couple of weeks in the refrigerator. Hot but flavorful; great for bland foods, such as Hainanese Chicken Rice (page 275).
Coconut Milk
Canned coconut milk is great stuff—I use it all the time. But fresh coconut milk—made from dried, unsweetened coconut, which is sold at every health food store (and many Indian, Latin, and Caribbean markets)—is cheap, easy, delicious, and pure. You can make coconut milk thick or thin, depending on the proportions of water to coconut; this is a fairly rich blend, equivalent to canned coconut milk. The coconut also can be reused to make a thinner milk from a second pressing.
Marinated Mushrooms
An unusually versatile preparation, good as an appetizer, a side dish, or a salad, and as appropriate over lettuce as it is solo. Can be made days and days in advance.
Sweet Nam Pla Dipping Sauce
The strong, unusual aroma of nam pla (Thai fish sauce, page 500) is not something that instantly appeals to many Westerners. But when you cook with it, or mix it with other flavors, its wonderful, characteristic saltiness blossoms. This incredibly simple dressing is great with seafood or mixed greens.
Nam Prik
This is an essential, basic, slightly sweet Thai sauce (the Vietnamese nuoc cham is almost identical) used as a dressing for vegetables, noodles, meats, and fish and as a dipping sauce for almost any tidbit of food. Addictive, if you ask me. (Try it with plain grilled shrimp and you’ll see.) Many people make this blazingly hot; my version is much tamer. If you add five, or even ten, small Thai chiles, you won’t be breaking with tradition. See page 500 for information on Asian fish sauces like nam pla, page 185 for a description of dried shrimp.
Raita
Raita is salad, relish, dip, and side dish in one. Yogurt-based, it usually includes something sharp to balance the sour blandness: onion, spices, mustard, even chiles. (It’s most closely associated with India, but similar mixtures are made in the Middle East.) The recipe here is the basic foundation of many raitas and is usually not eaten as is but added to according to preference. There are infinite variations, of which the ones that follow are among the most popular. All balance spicy curries well but are also good eaten on their own or as a dip for flatbreads, like those on pages 559–565.
Som Tum
This fiery, strong northern Thai specialty (if it’s made correctly, you will really reek after eating it, but it’s worth it) has become one of the most popular dishes in Thailand and at Thai restaurants in the States. When I was in Bangkok, I could not walk down the streets or through the markets without at least a dozen offers of Som Tum from the vendors, and it was hard not to stop for a little dish with some grilled meat and sticky rice. You can usually find green, or unripe, papayas and yard-long beans (and the Thai fish sauce called nam pla) at Asian or Latin groceries, but you can also substitute Granny Smith apples for the papaya and Napa cabbage for the beans.
Nuoc Cham
Used widely for spring rolls, this also tastes great with plain grilled meat or chicken or spooned over lightly steamed vegetables. You can substitute soy sauce for the nuoc mam (usually called nam pla in this book and described on page 500, but in any case Southeast Asian fish sauce) if you prefer.
Orange and Walnut Salad
Morocco’s oranges are renowned for their distinctive sweetness, but they’re not common here. Use good California or Florida navels or clementines (you’ll need six or eight) instead. Removing the thin membranes from the individual segments is an optional refinement.
