Herbed Corn on the Cob

Lemon thyme, available at farmers markets and specialty produce markets, lends this corn a delicate lemony-herbal flavor, but feel free to use regular fresh thyme instead. Steaming the corn is a gentle method that allows you to cook it in butter; you can pull back the husks and use them as a handle while eating.

Turkey Tamales with Mole Negro

These are one of the most renowned Oaxacan classics: succulent banana-leaf tamales with a fluffy pillow of masa infused with the rich flavors of black mole and shredded cooked turkey. The meat has to be cooked by a moist-heat method, or it will be tasteless and dry, so I don't recommend using leftover roast turkey. Simmer pieces of turkey in liquid and use the most flavorful parts, not the white breast meat. Though the black mole version of turkey tamales is best-known, the dish is equally good with Mole Rojo, Coloradito, or Amarillo.

Lewis Rossman of Half Moon Bay, California, writes: "I'm a chef, and Mediterranean is probably the best way to describe the kind of cooking I do at my restaurant, Cetrella. There's an emphasis on seafood, plus several dishes inspired by places I've visited like Provence and Catalonia. This is one of my favorite recipes from the menu. It also happens to be the thing I make at home all the time." Serve with crusty bread to dip into the tomato-anise sauce.

Indoor Clambake

This recipe adapts a classic outdoor clambake for the stovetop. The ingredients are steamed together in mesh bags that fit easily into a large lobster pot. Although the beauty and drama of unveiling an outdoor clambake cannot be duplicated, this method produces a mingling of flavors that's nearly indistinguishable from the original. "At my Summer Shack restaurants, we literally sell thousands of these indoor clambakes each week," says White. Clambakes vary up and down the New England coast. In Maine you might find chicken and hotdogs, on Cape Cod a whole fish, in other places crabs. One famous clambake held for over 100 years by the "Friends" from Allen's Neck in Westport, MA, features tripe that's braised and wrapped in little foil packages. "In this recipe," says White, "I add Portuguese sausage, which is common around the 'South Coast' area of Massachusetts and Rhode Island." Read more about White and clambakes >.

Steamed Sea Bass with Ginger and Shiitakes

You can't fling a chopstick in this übertrendy Japanese eatery without hitting at least one celebrity: Jessica Simpson, Cameron Diaz, Jennifer Lopez, Madonna, Leonardo DiCaprio, Liv Tyler, George Clooney — the list goes on. The best of the beau monde enjoy a variety of fresh fish (raw and cooked) in a soothing Zen setting. This recipe may have a higher percentage of calories from fat than other fish dishes, but it's mostly the healthy kind.

Steamed Blue Crabs with Black Ginger Dipping Sauce

Blue crabs take a little more work to eat than larger crabs like Dungeness, but their sweet flavor is worth the extra effort. Blue crabs are commercially harvested from New York to Florida — including, most famously, Chesapeake Bay — and the Gulf Coast states. The best are available from late summer to early fall. If you're landlocked or on the West Coast, you can order live blue crabs from The Crab Place (877-328-2722; crabplace.com).

No matter what Italian restaurant we visit, my dad can't seem to resist ordering linguine with clams. Although they're not technically clams, cockles work best in this dish, since they're very small and have tender, sweet flesh. You can identify them by their tiny size (about 1/2 to 1 inch across) and green-tinged shells.
