Marinara Sauce with Fresh Herbs

THIS IS OUR BASIC RED SAUCE and a recipe you will turn to again and again. It’s one of the most versatile marinara sauces around, topping pasta, homemade pizza, or fresh seafood.

Chicken Stock

MAKING CHICKEN STOCK is one of the easiest things in the world; toss the ingredients in a pot and let it simmer while you do something else. After trying dozens of recipes, I settled on this one, which makes a pot of stock and a poached chicken for dinner or lunch the next day. Crunchy Chicken and Rice Salad (page 53), The Big Omelet (page 210), Chicken Salad with Corn and Cilantro (page 51), and Chicken-Avocado Salad (page 49) are delicious ways to enjoy the poached chicken. Browning the vegetables increases the flavor of the stock and lends a nice golden color. Adding wine enriches the flavor while deglazing the pan.

Decadent Hot Chocolate

THIS IS TRUE HOT CHOCOLATE——as opposed to cocoa—made by melting chocolate into hot milk. It doesn’t take any longer than hot cocoa to prepare but is a richer and creamier concoction. Top each mug with a dollop of whipped cream, marshmallows, or ground cinnamon, or dunk your favorite cookie into it.

Mocha-Butter Crunch Pie

WITH A CHOCOLATE CRUST and a creamy espresso filling, this pie is like a mocha cappuccino disguised as dessert. Here are a few tricks for a successful pie: Make sure the butter and cream for the filling are at room temperature, and remember to scrape the sides of the bowl frequently as you mix. For serving, cut the pie with a knife that’s been dipped in hot water and wiped dry.

Red Wine Reduction

This velvety sauce, made with a bottle of red wine and a bottle of port, a sweet fortified wine, enhances any meat it is served with. The wines are reduced with chicken stock for a sauce more intense than the average red wine sauce.

CUT FROM THE SHORT LOIN SECTION, beef tenderloin is a succulent cut of meat. Grilling adds flavor, and with a sprinkling of dried herbs and an intense red wine sauce, the beef is even more flavorful.

THIS RICH LAMB STEW is perfect for cold winter nights. It leaves out the traditional potato in favor of mushrooms and oregano, which provide a wonderful earthy flavor. A final twist comes in the addition of soy sauce, which intensifies the taste of this satisfying dish.

Scallop Orzo with Wild Mushrooms and Sherry

BRINY SCALLOPS AND WOODSY MUSHROOMS are tied together with the light, sweet note of sherry in this creamy fall pasta dish. We prefer hedgehog mushrooms because of their small size, but you could substitute other wild mushrooms if you prefer.

Lemon Risotto

RISOTTO IS A SIMPLE, ELEGANT DISH that acts as a vehicle for a variety of flavors. Adding lemon to risotto is common in Italy, where the subtly flavored dish is often served as an appetizer. I like it as a side to Butter-Rubbed Salmon (page 103) with Blueberry Sauce (page 104) or simply enjoy it as a vegetarian main course, perhaps accompanied by blanched asparagus.

Chicken Cutlets with Herb Butter

GOOD TO KNOW It takes only a tablespoon (or two) of olive oil to sauté chicken cutlets to a golden finish. Dredging the chicken in flour first encourages browning, but the temperature of the pan is the real key: Start with a hot skillet, and let the chicken form a crust before turning. After you remove the chicken from the pan, incorporate the browned bits into a quick sauce with wine, herbs, and some butter.

WHY IT’S LIGHT French onion soup is usually capped with a molten crown of cheese, but each cup of this trimmer version is topped with a piece of cheese toast instead—a cup of cheese is enough for all eight servings. Well-caramelized onions are the true key to this soup’s appeal; be sure to cook them until they turn a deep golden brown.

Butternut Squash Risotto

WHY IT’S LIGHT Risotto’s little secret: It’s usually enriched with ample butter at the end. But one bite of this version, which contains just one tablespoon butter, shows how delectable the dish can be without all the extra fat and calories. And rather than adding the squash at the end of cooking, per the usual method, you cook it along with the rice, so it contributes creaminess and sweetness to the final outcome.

Pork Loin with Onions and Dried Apricots

GOOD TO KNOW Soaking pearl and cipollini onions in warm water for just ten minutes makes their thin, tight skin easier to remove. After soaking, simply cut off the root end and peel back the skin. If you can’t find pearl or cipollini onions, you can substitute one large or two small yellow onions, each cut into eight wedges.

Apple-Braised Turkey Thighs

GOOD TO KNOW Even the dark meat of turkey and chicken, such as thighs and legs, can be part of a low-calorie meal; cooking the meat with skin and bones intact yields great flavor, and the skin can be discarded before serving to reduce fat and calories. Serve with steamed green beans tossed with a little melted butter.

Irish Lamb Stew

WHY IT’S LIGHT Lamb is naturally tender and flavorful; shoulder meat is leaner than other cuts (such as loin or sirloin chops). You may substitute any other lean cut of meat, such as cubed beef chuck, pork shoulder, or boneless, skinless chicken thighs.
