Liqueur

Cherry-Cranberry Sauce

This sweet-tart relish has 7 fewer grams of sugar than the canned kind, and it supplies disease-fighting antioxidants.

Fresh Fennel Pan Gravy

The technique: Pan juices—the flavorful liquid and crispy bits left in the roasting pan— form the base of this gravy. To prevent lumps, thoroughly whisk in the flour, then gradually add the wine and stock, whisking until smooth.
The pay off: Super-roasty flavor.

Shrimp Scampi with Quick Preserved Lemon and Fennel on Polenta

L'Albatros brings a taste of France to Cleveland's University Circle neighborhood. Cassoulet, bouillabaisse—and even escargots—show up on the menu. But the restaurant also dabbles in other regions of the world. There are pizzas, a burger, and this delicious take on shrimp scampi, an American classic.

Kahlúa-Spiked Frozen Mocha Lattes

The base for this fun frozen dessert cocktail can be prepared up to one month ahead. Keep a batch in your freezer for an almost-instant treat.

Grapefruit Campari Sorbetto

Ciao Bella has made this classic Italian flavor since the beginning, and it's the favorite of our president, Charlie Apt. Campari, invented in the 1860s by Gaspare Campari, is an alcoholic beverage made with a secret mixture of herbs and bark that gives it its characteristic bitter edge. Here that bitterness is intensified by the sharpness of the grapefruit, which makes this the quintessential palate cleanser; if you want to serve it as a dessert, increase the sugar to 2 cups. Campari's distinctive red color lends a beautiful gentle pink tone to the sorbetto. For a nonalcoholic grapefruit sorbetto, simply omit the Campari.

Spumoni Sundaes with Espresso Hot Fudge Sauce

A cool treat inspired by spumoni, the classic Italian frozen dessert of ice cream, whipped cream, rum, nuts, and candied fruit.

Planked Figs with Pancetta and Goat Cheese

Naturally sweet, fresh figs get an all-over taste treatment with tangy goat cheese, smoky pancetta, slightly bitter fruit liqueur, and heat from black pepper. Serve these figs as finger-food appetizers or place them on top of dressed greens for a salad. High-heat planking caramelizes the figs and burnishes the goat cheese, adding another level of flavor. The high heat cooks the fruit quickly, resulting in an outer charred fruit and warm center that has texture and bite but is not mushy. This is an excellent way to plank most fruits and vegetables. Keep a spray bottle of water handy to lightly douse flare-ups. Suggested plank: 2 maple or oak grilling planks, soaked in water for at least 1 hour

Cherry-Topped Almond Panna Cotta

Panna cotta is an Italian custard dessert. It's similar to pudding but is thickened with gelatin instead of egg yolks. This version is a velvety almond custard topped with fresh cherries and a candied almond garnish.

Vanilla Creams with Strawberries in Cassis

Flavored creams (rose cream, geranium cream) served with berries are common in Britain. This take on the classic is a mix of drained yogurt and fromage blanc (fresh cream cheese). The soft, not too-sweet creams taste like a cross between an American-style pudding and a panna cotta. Keep in mind that the desserts need to chill at least eight hours.

Dessert Pancakes with Custard and Berries

These thin, anise-flavored pancakes are similar to French crepes.

Roasted Pepper Turkey with Orange Liqueur

I make this for a holiday dinner or when I'm planning to have a large group of friend and family over. The outside of the turkey is encrusted with a baked-on pepper rub. Inside, the meat is juicy and tender.

Cinnamon Crescents

These little crescents are gone in a couple of bites and can be surprisingly addictive. Their cinnamon sugar coating reminds me of churros, the deep-fried, cinnamon-sugar-coated lengths of sweet dough so popular in Mexico and in my own home state. For a dramatic buffet presentation set them on a tiered dessert tray along with Pequeño Chocolate-Pecan Tartlets (page 166) and Chubby’s White Pralines (page 168).

Grapefruit-Campari Granita with Vanilla Whipped Cream

A combination of fresh grapefruit juice and Campari (the bitter Italian aperitif) gives the granita a refreshing bite. A dollop of whipped cream brings everything into balance.

Ice Cream Sundaes with Chocolate-Coffee Sauce

Kate makes the chocolate sauce with homemade liqueur.

Broiled Oysters with Garlic Breadcrumbs

At Moran's Oyster Cottage, diners enjoy this dish alongside homemade bread.

Chocolate, Almond, and Banana Parfaits

This super-quick dessert can be served right away, or covered and chilled for up to four hours. (If you're making the parfaits ahead, let stand at room temperature one hour before serving.) Mascarpone (Italian cream cheese) is sold at many supermarkets and at Italian markets.

Linguine with Bay Scallops, Fennel, and Tomatoes

Light and fresh, this pasta dish is brightened with a squeeze of lemon juice. A V-slicer is the ideal tool for thinly slicing the fennel. For an even healthier option, try using whole wheat pasta.

Milk Chocolate Soufflés with Nougat Whip

The centers of these soufflés are soft and mousse-like. The topping takes its flavor cues (honey, nuts) from nougat candy.
