Fromage Blanc Panna Cotta

This dessert showcases the versatility of rhubarb, its acidity balanced by a silky, creamy cheese panna cotta. The recipe scales up quite easily if you want to make more for a crowd.

Strawberry-Rhubarb Consommé

Maybe I like rhubarb so much because I started eating it when I was a child; my mother’s strawberry-rhubarb pie is one of my earliest memories. And I love summer fruit soups; that’s something I learned from François Payard. So this combination is a natural for me. You need just the pod from the vanilla bean for this dessert, so if you have saved some used pods, now is the time to recycle. And you will need a whipped cream charger (see page 279) for the foam. You will have leftover consommé (which you can freeze) and foam; you simply can’t successfully foam less liquid than is in the recipe.

Strawberry-Rhubarb Mochi

Mochi are sweet, filled Japanese dumplings that are served chilled. I’ve been fascinated by them from the first time I had one, but I’d always been told that they could be made only in factories. And since the commercial ones are artificially flavored and colored and filled with ice-hard ice cream, that didn’t surprise me. One day, I promised my friend David Chang of Momofuku that I’ d make fresh mochi for him. It became a mission. Once I learned how to do it, I found that it really wasn’t difficult at all to make the tender, sweet rice dough and flavor it naturally. And since I fill mochi with a compote, they’re fork-tender. The basil fluid gel is an ideal herbal foil to the compote. I use 2-inch demisphere molds when I make mochi, but I’ve found that an egg carton works fine. The secret to the dough is working quickly. This recipe makes twice as much as you need for the fourplay, but I hardly consider leftover mochi a problem. The mochi will keep for 1 day in the refrigerator.

Red Wine Vinaigrette

A simple, light, and versatile dressing that can be used to top any salad. The honey adds a little sweetness and rounds out the flavors.

Basil Pesto

The most basic, most traditional pesto is this basil-based one that was invented in Genoa, in northern Italy; it’s bright green and wonderfully aromatic. Be sure to add your oil slowly, so that the sauce fully emulsifies—that is, all the ingredients bind together, creating a thick, uniform consistency. Lots of basil varieties are available, some sweeter, some spicier, and in fact basil is an important ingredient in the cooking of southeast Asia, especially in curries. Each variety will impart its unique flavor to a pesto, so be adventurous, and try whatever type appeals to you. Just remember: You need a lot of it, and it should be fresh and crisp, not wilted or soggy.

Make these for your little girl’s next tea party; they are pretty and so easy to make. Or feel free to make these in a regular-size muffin tin, increasing the baking time by about 5 minutes.

Espresso Chocolate Mousse with Orange Mascarpone Whipped Cream

If you’re intimidated by the prospect of making a mousse, this recipe is pretty cool. Once you’ve warmed up the milk, just combine everything in the blender, then pop it in the fridge to chill. Desserts don’t get any easier than that. Top individual servings with any kind of flavored cream you like; I like orange with chocolate, but a cinnamon cream would be nice, too.

Roasted Pork Loin with Roasted Garlic Vinaigrette

Few things are easier to make for a group than a roasted pork loin, but sometimes it can be a little bland. Gilding the sliced meat with a bit of mellow, garlicky sauce ensures your Sunday roast will have plenty of flavor and adds moistness as well.

Rib-Eye Steak with Black Olive Vinaigrette

Like a lot of men, my husband thinks entertaining begins and ends with grilled steaks, so I’m always looking for different ways to jazz them up and keep it interesting. This bold vinaigrette fits the bill and really stands up to the strong flavor of beef. Make the vinaigrette in advance, throw some steaks on the grill, and you have a great dinner; if you have a veggie friend, you can serve the same versatile vinaigrette over warm pasta.

Rigatoni with Squash and Prawns

This recipe comes from a beachside cafe in Capri. Prawns are very popular in Europe, where they are abundant, but here they are a bit harder to find and a little more expensive. Feel free to substitute extra-large shrimp in their place—or leave them out altogether. It will still be a very satisfying, hearty meal. The squash makes the most luxurious, velvety sauce imaginable, with a beautiful orange color.

Amaretto and Raspberry Smoothie

As thick and creamy as the richest milkshake, this can also do double duty as a dessert. Serve half portions in pretty stemmed glasses with the cookie crumbles sprinkled on top. Be sure to make this in two batches, because the ingredients will overflow your blender container.

Linguine and Prosciutto Frittatas

Here’s a fun way to use up leftover pasta. When I was young, my mother would throw leftovers of any kind of pasta—red-sauced, white-sauced, whatever—into her frittata mixture for a quick snack for us kids. She generally made one large frittata, but I like to make them in individual servings; that way you can keep them in the fridge and grab one for a quick, nutritious snack, hot or cold.

Prosciutto and Melon Soup

After tomato, basil, and mozzarella, prosciutto and melon just might be the most classic Italian flavor combination of all time. It gets a whole new lease on life, though, when served as a savory cold soup. The tomato contributes a bit of acidity that tones down the melon’s natural sweetness, and salty prosciutto makes the whole dish sing. If you can’t find canned San Marzano tomatoes, which are a bit sweeter than regular canned plum tomatoes, go for an organic brand such as Muir Glen.

Tuscan White Bean and Garlic Soup

I love the versatility of cannellini beans. I’ve puréed them to make a dip and have used them as a thickener for soups. They’ve made many appearances in salads and even pasta dishes. This time, though, the cannellini bean is the star, offering a creamy, buttery texture for the base of the soup, which perfectly absorbs the flavors of the aromatics.

Hearty Tomato Soup with Lemon and Rosemary

I made this for an après-ski menu on Everyday Italian. It is quite hearty and the beans give it nice body without making it too thick. The whipped cream garnish is beautiful and becomes even more fragrant as it slowly melts into the soup.

Vanilla Bean Milkshake

What can I say about this one? Sometimes the best things in life are the simplest, and a thick and creamy vanilla milkshake is definitely one of those things. The fresh vanilla bean will give you a shake flecked with tiny dark specks of recognizable vanilla, but its true and intense flavor is a quality far greater than cosmetic. Basic but never boring, the vanilla shake can also be doctored up in dozens of ways. I’ve included a couple of my favorite variations below.

Toasted Marshmallow Milkshake

Don’t laugh . . . it works, and it’s good. The key is to make sure that your marshmallows are really toasted to a deep golden brown color on all sides to get the most flavor. Don’t walk away from the oven because the marshmallows brown quickly. Would a dollop of “Fluffy” Whipped Cream (page 154) on top be overkill? I think not! In the mood for S’mores? Just blend the toasted marshmallows into the Double Chocolate Milkshake (page 134) and add a few tablespoons of crushed graham crackers on top of the whipped cream.

Roasted Pineapple Milkshake

This might be one of the more esoteric shakes in this book, but I hope you find it intriguing, not off-putting. The extra step of roasting the pineapple is well worth your time. Roasting concentrates the pineapple’s flavor and intensifies its sweetness as the heat of the oven caramelizes the fruit’s natural sugars. Tart lemon sorbet is added to balance that sweetness and for its icy texture. Using pineapple juice gives this shake a depth of flavor and refreshing quality that milk wouldn’t provide.

Peanut Butter–Banana–Marshmallow Milkshake

I am one of the few people whose mother never packed a Fluffernutter sandwich in their school lunch box. You know what? That’s okay. The thought of peanut butter, marshmallow, and banana “sandwiched” between two slices of squishy, flavorless bread was not so appetizing to me even as a child. However, when you get rid of the bread and add some ice cream and milk to those three ingredients, it’s a totally different story. If only my mom had filled my lunch-box thermos with this shake.

Peach Bellini Milkshake

Every time I visit Venice, Italy, one of my first stops is Cipriani for their signature Bellini cocktail, a wonderful mixture of fresh peach puree topped with cold sparkling Champagne. To make my milkshake version kid-friendly, just top it off with a splash of seltzer water.
