My first experience making Swiss cookies was less than optimal. A friend had given me his mother’s recipe for Basler leckerle, a spiced almond cookie swathed with a kirsch glaze. They’re meant to be kept in a tin for 6 months before eating, during which time they supposedly soften up and become toothsome delights. To make a six-month story short, I was skeptical when I plucked one of the cookies out of the tin. Then I bit down and almost lost a tooth they were so hard. Since then, I’ve avoided Swiss cookies. But, some time later, at Stohrer bakery on the rue Montorgeuil in Paris, I tasted the lovely zimtsterne, star-shaped cinnamon-almond cookies of Swiss origin that are made only around the holidays, and fell in love. I was prompted to come up with a recipe that I could have year-round—as well as one that wouldn’t require a trip to the dentist. I couldn’t find a cookie cutter in the traditional zimtsterne shape of a six-point star in France where I live, so a friend brought me one from New York, which I guess makes this Swiss cookie a star of international proportions.
Gingersnaps
This is the classic gingersnap: thin, crisp, with a spicy bite. For the best flavor, use very fresh spices. I grind my own cinnamon and cloves for these, and never, ever use preground black pepper. If you don’t have a pepper mill, shame on you. Go get one. Although not a pantry staple, coarse-crystal sugar—such as Demerara or turbinado—is wonderful embedded in the surface of each snappy cookie. I find it pretty indispensable for these cookies and use it for sprinkling onto many different baked goods before they go into the oven, so I always keep a tub of it in my kitchen cabinet.
Blanco y Negro
It seems during the last decade or so, America has gone completely crazy for coffee drinks. All sorts of overpriced caffeinated concoctions are foisted on the public under the guise of coffee. But there’s nothing you can buy that can beat this simple coffee dessert. Blanco y negro is the Spanish variation of affogato, an Italian creation consisting of an innocent bowl of ice cream drowned in hot espresso; affogato comes from the Italian verb affogare, meaning “to drown.” I’m not fond of dessert names that reference morbid things like drowning and death (as in “death by chocolate”), so I opt for the kinder, gentler Spanish interpretation that refers to snowy, white (blanco) sherbet mingling agreeably with the black (negro) espresso that’s poured over the top. They come together in an unexpected, but very winning, way.
Buttermilk Panna Cotta with Blueberry Compote
Panna cotta quickly became a popular restaurant dessert for many of the same reasons that make it an ideal dessert to serve at home: it can be prepared well in advance and it tastes good. It’s a win-win dessert if there ever was one. I used to refer to this as “ranch panna cotta” because it was inspired by a tangy buttermilk-based drink that I had at a south-of-the-border spa. But because people said that moniker brought to mind ranch salad dressing, I decided to keep the name simple and straightforward—just like the dessert.
Polvillo
I first tasted this drink in Tabasco, where they grow some of the best cacao, and fell in love with it. It’s traditionally made with freshly ground toasted cacao beans, but in this recipe I call for I cocoa powder because it’s more readily available. Pinole is a flour made from toasted dried corn kernels. It has a wonderful nuttiness and is often mixed with cinnamon and sugar and stirred into water or milk for a delicious beverage. You can find it at specialty grocery stores and online. In Mexico, many people think the natural sweetness of the corn is enough, but I included sugar in this recipe because I think it’s more of an acquired taste. Honey is also quite nice in this beverage, so substitute it for the sugar if you prefer.
Horchata de Arroz
Horchatas, also called aguas de horchata, are a popular type of drink in Mexico most commonly made with rice, but they can also be based on many other ingredients, from almonds to barley or oats to coconut—which are also delicious. My favorite has always been the kind made with rice. Not only are horchatas based on different ingredients, some are made with water, while others use whole milk, sweetened condensed milk, or evaporated milk, or even a combination of milks, in addition to the water or in place of it. I’ve had many versions, and I like those with some milk because they have a thicker and creamier mouthfeel, so that’s what this recipe calls for. But feel free to make it with water only, adjusting the consistency to suit your taste.
Raspado de Rompope
This ice is delicious on its own, but it also goes well with pretty much any kind of chopped fresh fruit. Rompope is similar to eggnog (see page 59), but it has a richer texture and the main spice used is delicious canela.
Raspado de Horchata con Fresas
This recipe was first published in the New York Times as part of an article on different kinds of shaved ice. The paper’s Diner’s Journal blog asked readers to suggest different flavors, and I had to pick one and come up with a recipe. I chose horchata, a milky beverage often made with rice, because I thought it would go perfectly with the luscious, juicy strawberries that filled the market stands at that time. It’s worth seeking out Mexican cinnamon, as its flavor makes all the difference in this raspado. If you want a stickier, sweeter syrup, add another can of sweetened condensed milk.
Paletas de Rompope
Rompope is a beverage brought to Mexico by nuns in Spanish colonial times. You can purchase it at some U.S. liquor stores, and more widely in Mexico, but making it is fun and you’ll surely enjoy the frozen version.
Paletas de Chocolate
In Mexico, chocolate is mainly used to prepare hot chocolate, so when you hear people say “Mexican chocolate,” or chocolate de mesa, they usually mean chocolate made for this purpose. It’s grainy because it’s basically toasted ground cocoa mixed with sugar, cinnamon, and sometimes vanilla, almonds, or both. I really love the fragrance of Mexican cinnamon, so I like to infuse some in the liquid for this ice pop to add more flavor. I decided to add little bits of chocolate and almonds to these paletas to give another layer of flavor and crunchiness. Who doesn’t love that?
Apple Walnut Crumble
This apple crumble is the ultimate healthy-eating comfort food. Together the warm cinnamon apples and the rich walnut topping can’t be beat. Combining apples of mixed texture works best. A firm variety such as Golden Delicious will retain its shape and texture while a Cortland will lend itself beautifully to producing a thick, delicious sauce.
All-American Apple Pie
Here’s a picture-perfect apple pie—filled mile high with juicy apples. Sprouted spelt flour makes the crust unbelievably flaky and easy to work with. Serve it hot with a generous helping of vanilla ice cream and listen to the raves. For a vegan version, use butter substitute instead of butter, and serve with Soy Vanilla Ice Cream (page 83).
Cinnamon Apple Crumb Bars
A cross between apple pie and crumb cake, these cookie bars are perfect for parties, picnics, and crowds, and a great addition to any cookie platter. For the best taste and texture, I recommend you use any combination of Macintosh, Cortland, or Golden Delicious apples for the filling.
Orange Pecan Granola
I first made this delicious, super-crunchy granola while consulting for Edge of the Woods, a great natural foods market, bakery, and vegetarian café in New Haven, Connecticut. At the time, I was developing lots of agave nectar desserts and goodies for diabetics and clients concerned with sugar when it occurred to me that there were no good-tasting, sugar-free granolas available. Hence the birth of Orange Pecan Granola, a staple in our household! Great on its own as a snack, or sprinkle it over yogurt, fresh fruit, or even frozen yogurt for dessert.
Dried Fruit Compote
This is an absolute go-to dish for people taking pain medication. Why? Because many pain meds, especially opiates, can stop up the works, if you get my meaning. This isn’t your typical fiber-laden, tasteless concoction. (Can you say bran muffin?) In addition to prunes, the traditional remedy, this compote also includes dried apricots and cherries, and we’ve also brought ginger and cardomom to the party. The result is a delicious compote that smells incredible while it’s cooking and goes great over oatmeal or on toast. For those days when you need a kick start, this blend will nudge you in the right direction. Believe me, it works. Before cooking the compote, it’s best to soak the fruit for a few hours, or preferably overnight, so plan ahead. This is great served warm or at room temperature.
Cinnamon Ginger Tea
I’ve been playing with ginger in its various forms for years. From an Ayurvedic (traditional eastern Indian medicine) perspective, ginger “fires” the body’s digestive hearth, to make the stomach and colon more efficient in metabolizing food. Here I’ve combined ginger with cinnamon’s round, sweet flavor to create a modified Chai tea with some great health benefits. Cinnamon regulates blood sugar, while both ginger and cinnamon contain tumor inhibitors. This tea is a great way to wake up both your taste buds and your tummy.
Commonweal’s Most Nourishing and Healing Tea
You may have heard the slogan “You’ve tried the rest; now try the best.” That’s the way I feel about this tea recipe. It was developed ages ago by the fantastic folk at the Commonweal Cancer Help Program, a renowned retreat for patients and caregivers, and they’ve been very kind in allowing me to share their recipe with you. When I am cooking at Commonweal, I often make about six quarts a day so I’ll have some on hand for anyone who comes through the door, and still, it’s never enough. The blend of ginger, cloves, cinnamon, and cardamom is like a backrub in a cup. It turns me into absolute mush, it’s so good.
Swedish Cardamom Cookies
This is an old-fashioned recipe from Sweden, often baked during Christmastime. Although Swedish cuisine may be unfamiliar to most of us outside of Scandinavia, these cookies will probably taste familiar. Cardamom is the predominant spice in masala chai, the warming, aromatic tea sold by street vendors called “chai wallahs” throughout South Asia, and now also sold at Starbucks around the world, packaged as chai latte. But whether it’s Starbucks, Stockholm, or India, these cookies from way up north taste like the holidays to me.
Cinnamon Rolls
These cinnamon rolls are to die for. I can hardly control myself as I wait for them to cool. In addition to their overwhelming yumminess, they are also incredibly easy to make. I’ve used rapid-rise yeast (also known as quick-rise yeast, fast-rising yeast, instant yeast, and/or bread machine yeast), which eliminates all that hanging around you normally do while waiting for old-fashioned slow-pokey yeast to rise. Make these for a holiday breakfast, or any weekend morning, for an extra somethin’ special.
Pumpkin Cupcakes
Fragrant and brimming with health-boosting nutrients, these little cakes are a scrumptious alternative to pumpkin pie at Thanksgiving dinner. Top with Whipped Cream Frosting (page 93).
