Cinnamon Sugar Triangles
Be sure to buy eggroll wrappers—the ones that are bigger than wonton skins—to make these triangles. These are an awesome treat at the end of an Asian-inspired meal . . . or any time. Use different colors of decorative sugar to make them extra fun and festive. I love making them with Wilton Sprinkles Pink & White Sparkling Sugar when girlfriends are coming over or when working with the young girls I mentor. If you want to make these triangles for a group, don’t worry. The recipe is really easy to multiply. I was tempted to write the recipe in a larger quantity. But I find them so addicting, I think it’s slightly “dangerous” to have them sitting around.
Apple Cinnamon (Breakfast) Bruschetta
Toast the mini pita in a toaster or toaster oven. Just be careful, if using a toaster, when removing them. I keep a set of wooden chopsticks on hand for safely “fishing” smaller items from the toaster. I love this dish following a quick breakfast omelet or scramble. It has only about 100 calories, so it provides a guilt-free sweet treat after lean protein to fill me (or you!) up. If you’re making this for small children, they’re likely to love it even more if you mix the bruschetta topping with the yogurt and then stuff it in the pitas—they’re apt to find it easier to eat.

To use in desserts—strudels, crusts, tarts, etc.
Peach and Blueberry Cobbler with Ginger and Cinnamon
This is a gorgeous dessert and naturally low in calories, as long as you don’t add a ton of sugar and don’t serve it with whipped cream. It just doesn’t need it. In the heat of the oven, as they steam under the topping, the peaches and blueberries meld into a magical, flavorful filling that needs little help from sugar or fat. The spices are really all the fruit requires.
Very Berry Crumble
I like to use frozen berries for this crumble. Not only can I have it any time of year, but the juices left in the bag after thawing provide sweetness (without adding a lot of sugar) and sauce for the crumble.
Gingerbread Soufflé
We love the indulgence of individual soufflés straight out of the oven. These are the perfect winter dessert; the spicy gingerbread flavors permeate every delicate bite. You can top them with a small scoop of vanilla ice cream and enjoy the play of hot and cold, spicy and sweet. Or you can pour on a little hard sauce or crème anglaise or even eat them plain. If you love gingerbread, you will be very happy with these light, airy soufflés.
Sourdough Doughnuts
The tang of these doughnuts provides an excellent counterpoint to the cinnamon sugar that coats them. Beware; these doughnuts tend to disappear quickly, especially if there are people in the kitchen when they emerge from the fryer. The doughnuts can also be dipped in warm ganache made with equal parts chocolate and cream. We’ve even been known to turn these into bomboloni by filling them with vanilla pastry cream and serving them with chocolate dipping sauce. Lemon curd or good jelly, perhaps lightened with a little whipped cream, are also nice fillings. A little caramel sauce is never an unwelcome accompaniment, whether the doughnuts are stuffed or plain. But really, the cinnamon sugar does pretty well all by itself. Warm doughnuts are one of life’s special pleasures, and once you experience them, you’ll want to make these again and again.
Montecaos de Mamine
This melt-in-your-mouth cookie, also called ghouribi, comes from Oran, Algeria, but is widely used across North Africa. I love its soft, crumbly texture, made from crushed nuts and sugar. It reminds me of Mexican wedding tea cakes or Greek kourambiedes. You can substitute butter for the oil if you like. These irresistible and simply made drop cookies are eaten on Purim, Hanukkah, and Shabbat, when Moroccan Jews decorate the table with flowers and sweets. They are also one of the symbolic cookies that women gather together today in France to make for weddings and other life-cycle events.
Butterkuchen
When researching this book, I talked about Jewish food with Pierre Dreyfus, a greatgrandson of Captain Alfred Dreyfus, the Jewish officer on the French General Staff who was falsely accused of being a German spy. The one recipe that Pierre remembered from his childhood was for butter, or butterkuchen, simple shortbread butter cookies sprinkled with cinnamon and sugar. A century ago, butterkuchen, similar to sablés in Brittany, were made by using equal weights of eggs in their shells, butter, sugar, and flour. Sometimes cooks would add a little kirsch or vanilla sugar. Some used a glass to cut round pieces from the cookie dough; others pressed the dough into pans and cut it into tiny squares or rectangles after baking. One elderly lady I interviewed told me how her grandmother would make butter in the summer from the fresh, unpasteurized cream of their cows and store it in a stone jar on a ledge outside their house all winter long. Then, when she wanted to use the butter for butter, it was right there. One day when I was visiting Sandrine Weil (see page 181), she and her daughters showed me how to make a tender butter. This is her take on the butterkuchen, made with rich French butter, which has a low water and high fat content, and is cut after baking into the traditional 1-inch squares.
Compote de Pruneaux et de Figues
In the early twentieth century, a Jewish woman named Geneviève Halévy Bizet, the mother of Marcel Proust’s friend Jacques, held one of the most popular women’s salons in Paris, depicted in Proust’s work. Gertrude Stein, the Jewish writer, along with her partner, Alice B. Toklas, hosted another famous salon, conversing with and cooking for writers and artists during the many years when they lived together in France. One of the recipes Alice liked to serve to their guests was very similar to this prune-and-fig compote. In Alsace and southern Germany, prune compote is eaten at Passover with crispy sweet chremslach, doughnutlike fritters made from matzo meal (there is a recipe for them in my book Jewish Cooking in America).
Gratin de Figues
When Elie Wiesel stopped in Bordaeux to give a speech, he asked members of the Jewish community for suggestions on where to eat. They told him to go to Jean Ramet, a marvelous thirty-seat southwestern-French restaurant. Run by a Jewish chef, it is located right down the street from the eighteenth-century Grand Théâtre. Raised in a Polish Jewish home in France, Jean doesn’t have many culinary memories from his childhood. He grew up in Vichy, where his parents, like so many other Jews returning to France after the war, had priorities other than food. But food became a career for Jean. He apprenticed at the three-star Maison Troisgros in Roanne, learning pastry skills. “Pastry-making gives you discipline; it is very important for a chef,” he told me. “You need the rules of pastry first.” In the 1970s, Jean met Tunisian-born Raymonde Chemla on a youth trip to Israel. They have now been married for more than thirty years, living mostly in Bordeaux, where they run the restaurant. On vacations, they often travel to Morocco, because they love the food of North Africa. “Moroccan food is sincere,” said Jean. “When I met Raymonde, I fell in love with North African spices, such as cinnamon, mint, and cloves.” This gratin of figs with a zabaglione sauce and a splash of orange-flower water is a dish that celebrates North African flavors and classic French techniques. It also captures the essence of the flavor of fresh fig. As the French Jewish sage Rashi so beautifully stated in his commentaries on the Bible, “Summer is the time of the gathering of the figs and the time when they dry them in the fields, and it [the dried fig] is summer.”
Gâteau de Hannouka
Danielle Fleischmann bakes this apple cake in the same beat-up rectangular pan that her mother used. Known as a “Jewish apple cake” because oil is substituted for butter, it is called gâteau de Hannouka in France. When Danielle makes the cake, she uses very little batter, and half sweet and half tart apples, a combination that makes a really tasty version of this simple Polish cake. Although her mother grated the apples, Danielle cuts them into small chunks. I often make it in a Bundt pan and serve it sprinkled with sugar.
Charlotte or Schaleth aux Cerises
This classic charlotte or schaleth aux cerises is adapted from Françoise Tenenbaum, a deputy mayor in Dijon who is responsible, among other things, for bringing meals on wheels to the elderly poor. At a luncheon in the garden of a fifteenth-century building where the film Cyrano de Bergerac, with Gérard Depardieu, was filmed, Françoise described this Alsatian version of an apple, pear, or cherry bread pudding that she makes for her family. Starting with stale bread soaked in brandy, rum, kirsch, or the Alsatian mirabelle liqueur, it is baked in an earthen schaleth mold or, as Escoffier calls it, a “greased iron saucepan, or a large mold for pommes Anna.” Earlier recipes were baked in the oven, for 4 to 5 hours. Françoise bakes hers in a heavy cast-iron skillet or pot for less than an hour, at Passover substitutes matzo for the bread, and, except during cherry season, makes hers with apples.
Cassolita
The word Cassolita comes from the Spanish word cassola or cazuela, which refers both to a round clay pot and that which is cooked in it. A Sephardic squash dish from Tétouan, Morocco, this cassolita is scented with cinnamon and caramelized onions and gets a nice crunch from the almonds. It is typically served with lamb couscous (see page 236), although it goes well with any hearty meat dish. When I made it for a dinner party for my editor, Judith Jones, all the high-powered foodies attending asked me for the recipe. It can be made ahead and then reheated before serving.
Spiced Lentils with Mint and Cilantro
When Violette Corcos Abulafia Tapieri Budestchu makes this spice-scented lentil dish, its subtle flavors bring back memories of the Morocco of her childhood. Now, when her grandchildren or great-grandchildren prepare it, it smells like afternoons and evenings they spent when they were growing up, visiting her in her apartments in Jerusalem or near Avenue Victor Hugo in Paris. Born in Mogador, Madame “Granny” Budestchu, a fabulous cook, is descended from Kabbalists, prominent merchants, and royal counselors to the sultans and kings of Morocco. Her recipes, traveling from country to country, like the path of the Jews, can be traced back at least to twelfth-century Spain. When she makes this dish, she grinds each spice separately with the mortar and pestle that she brought with her to Paris in the 1940s, enlivening the spices with the fresh tastes of mint and cilantro leaves.
Garam Masala
A mixture of aromatic (and generally expensive) spices that according to the ancient Ayurvedic system of medicine are meant to heat the body. This is the only spice mixture that I ask you to make at home and keep in storage. Its aroma is unsurpassed if mixed and ground at home in small quantities. Also, it will not contain cheap “filler” spices, such as coriander seeds, as many commercial mixtures do. I do keep the store-bought mixture in my cupboard as well for use in certain dishes that require less perfume. My recipes will tell you which one to use.
Easy Masala Chai
At all of India’s roadside stalls, Masala Chai is served already sweetened. I have added about 1 teaspoon sugar per cup in this recipe, which makes the tea just mildly sweet. You may double that amount, if you prefer.
Curried Brown Rice
Here is a recipe I have devised for the brown rices (and mixtures that combine brown rice with wild rice) usually found in Western markets. Served with vegetables and a yogurt relish, it makes a fine vegetarian meal. You may also serve this with meat and fish curries.
Sri Lankan Rice with Cilantro and Lemon Grass
Lemon grass is grown on the edges of the more precipitous slopes of Sri Lanka’s numerous tea gardens. Some of these plantations are visible from the front patio of Ena’s mountain bungalow. Lemon grass keeps insects away, and its long roots hold back the soil. I had this aromatic and festive dish in the museum-like home of Sri Lankan batik artist Ena de Silva, where it was served with dozens of curries and relishes. You may serve this at banquets and family meals alike. It goes well with coconut-milk-based curries, such as Kerala-Style Chicken Curry.
