Boeuf Bourguignon
Like coq au vin, this is a slow recipe that takes careful attention to a couple of ingredients: the bacon must be good slab bacon, nice and smoky and not too lean, and the wine should be fruity and worthy of drinking (there are Burgundies and American Pinot Noirs that meet this requirement and cost around ten bucks a bottle). By all means make this a day or two in advance if you like, then refrigerate and skim the fat if that’s your preference. Reheating will take only about 15 minutes. New potatoes, roasted in olive oil or butter, are terrific alongside this stew, but so is crusty bread. Round things out with a steamed vegetable or salad.
Carbonnade
A simple beef stew that is good over buttered noodles or with plain boiled potatoes. For the beer, use Guinness stout or another dark, bitter beer. Like many stews, this is equally good (or better) when refrigerated and reheated the next day. Other cuts of meat you can use here: though not traditional, this works well with chunks of lamb shoulder or veal shoulder.
Kalbi Jim
Koreans prepare and enjoy dozens of different stews and usually eat them so hot (in temperature—they’re often served over a flame so they are actually boiling while they’re being eaten) that Westerners are astonished. Some are so mild that they seem almost French; others are dark and richly flavorful, like this classic. Serve with white rice. Other cuts of meat you can use here: lamb shanks.
Lamb Pilaf with Cinnamon
Great for a small crowd, this one-pot meal is intensely flavorful and sweet and will fill your kitchen—indeed, your home—with the wonderful aromas of cinnamon and simmering meat. If you have the time and the energy, this is even better if you brown the lamb chunks first: Put about 2 tablespoons of olive oil in a separate skillet, turn the heat to medium-high, and brown the chunks on all sides, turning as needed; this will take about 15 minutes. (The lamb chunks can also be browned in the oven; just put them in a skillet or roasting pan and place in a 450°F oven. Roast, stirring occasionally, until they are browned all over, 20 to 30 minutes.) Other cuts of meat you can use here: boneless beef chuck, boneless pork shoulder or leg (fresh ham).
Veal Stew with Dill and Sour Cream
A fairly quick stew—some would call it fricassee, but that term is so widely used as to be meaningless—that gives you loads of uncommon flavor for very little work. Great with polenta (page 529), which you must call mamaliga in this instance. Other cuts of meat you can use here: pork shoulder.
Veal Shanks with Cherries
Think of this as osso buco, Russian style; the technique is almost identical to that in the following, better-known classic, but the result is sweeter and more fragrant. Serve with pilaf or buttered noodles. If you are lucky enough to find fresh sour cherries, by all means use them; pit about a pound and add them to the pan as you would bottled sour cherries, along with about 1/4 cup sugar and a bit more stock. Other cuts of meat you can use here: as in classic osso buco, you will lose something by substituting chunks of boneless veal for the shank, but you will gain time, and the results will still be quite good.
Stewed Baby Artichokes with Fava Beans and Peas
This is a classic combination of Italian spring vegetables, but it’s also a template for stewing any fresh veggies you like in olive oil. If you cannot get small artichokes—those so small they have no choke, so you can simply trim and quarter them—use frozen artichoke hearts. If you cannot get favas, use limas; here, too, frozen are okay, and the same with peas. This stew makes a good sauce for cut pasta, like penne. Other vegetables you can prepare this way: This is nearly a universal recipe; almost anything you can think of will work here, from spinach to potatoes to asparagus, as long as you adjust the cooking time accordingly. Mix and match as you like.
Lentils and Rice with Caramelized Onions
A slightly labor-intensive but wonderful vegetarian dish that, with its contrasting textures and slight sweetness, makes a terrific main course or a first-rate side dish. Other legumes you can prepare this way: split yellow or green peas.
Kimchi
Kimchi, the world’s best-known Korean ingredient, generally describes pickled vegetables, though cabbage is the most common choice. Originally a basic salt pickle, chiles were introduced in the sixteenth century, followed soon thereafter by fish or shrimp paste. Regional influences determine the level of pungency, with warmer regions producing kimchi heavily seasoned with chile powder and anchovy paste. Some take to kimchi immediately; for others it is an acquired taste. For information on nam pla (Thai fish sauce), see page 500. If you love kimchi, you’ll enjoy making this version. Even though it’s quick, the results will be as good as that found at most restaurants and better than almost any version you’ve bought in jars. Kept refrigerated, it will last for about a week. Dried salted shrimp are inexpensive and keep forever; you’ll find them at most Asian markets.
Rice, Pine Nut, and Currant Filling for Grape Leaves, Cabbage Leaves, Peppers, and Tomatoes
A flavorful vegetarian filling for stuffed vegetables (pages 445–447 and 492) that is simple, quick, and easy to make in advance. If you have a mild chile powder (like one made from Aleppo or New Mexican chiles), use 1/2 teaspoon or more of it in place of the cayenne. Some cooks add about 1/2 cup grated hard sheep’s cheese, of a type like pecorino Romano, to this mix.
Leeks Vinaigrette
Leeks have an alluring, herbaceous flavor unlike any other allium, and this simple salad is a great way to show it off. With slight adjustments in cooking time and quantity of vinaigrette you could substitute scallions, ramps, or, for that matter, shallots or pearl onions.
Mushrooms Poached in Sour Cream
This is a mild, rich side dish, one that can double as a sauce for buttered noodles or rice (it can be served on toast too). With chanterelles or other wild mushrooms, it’s a dream, but even with button mushrooms it’s super. If you have spring onions, this is the place to use them; otherwise, leeks are a great substitute.
Braised Olives with Tomatoes
An unusual preparation, though you might not think so if it included meat. I like it best with a combination of medium-sized black olives, like Kalamatas, and large green ones, particularly the type that come from Sicily, but any combination will do. A great side dish, especially with sautéed chicken, useful too as a topping for Crostini (page 41) or—thinned if necessary—as a pasta sauce. If the olives are very, very salty—only an occasional problem—parboil them in water to cover for a few minutes before starting.
Sweet and Sour Onions
I like this best with shallots, which are prettier and tastier than boiling onions. Some people add raisins (about 1/4 cup, from the beginning), which does not turn me on. Others garnish with toasted pine nuts, a nice but unnecessary touch. Other vegetables you can prepare this way: almost any member of the onion family, including leeks, scallions, and any kind of onion—if the onions are large, peel and quarter them, then insert a toothpick into each quarter to hold it together during the cooking.
Onion Gratin
A simple and delicious way to use onions as a vegetable, one that long ago became part of the Middle American repertoire but has sadly dropped out. Time for a revival? This dish is unquestionably best with small onions—pearl onions—or with cipollini, the squat Italian variety, or the very fresh spring onions, usually sold only at that time of year and looking like scallions on steroids. It will work almost as well with leeks, which should be trimmed first, then parboiled for 2 or 3 minutes. If you must use larger onions, parboil for a good 10 minutes before peeling and baking. Convert this to a gorgeous spring gratin by adding a handful each of fresh wild mushrooms, like morels, and fresh peas to the mix. Other vegetables you can prepare this way: shallots, treated exactly as you would pearl onions.
Pan-Cooked Grouper or Other Fillets with “Killed” Onions
Like the preceding dish, this one is wickedly strong tasting, not fiery-hot but potent with garlic, onions (which are salted to “kill” their harshness), and lime. Not for the faint of heart, but many people (including me) love it. You can use any firm-fleshed white fish: halibut, swordfish, striped bass, red snapper, and so on. Ideally, you’d serve this with Mexican Radish Salad (page 172), along with some beautiful tomatoes. Rice and beans would also be good.
Peperonata
A sweet classic, peperonata, like many vegetable stews, is easily varied: add chunks of potato, chicken, or zucchini or some minced garlic; a small chile or a bit of cayenne is also appropriate. Serve it hot as a side dish, warm as a topping for Crostini (page 41), or cold as a relish.
Steamed Crabs with Soy Dipping Sauce
This is one of those odd dishes that are easier to cook than to eat. Blue crabs take a lot of work; but they’re so delicious they’re worth the effort. If you live on the West Coast, you’ll probably use Dungeness crab, which will be easier.
Torta di Patate e Pomodori
A beauty—mild, soothing, and delicious. Be sure to use waxy (“new”) potatoes, which will not fall apart. As with the other tarts in this chapter, this is best warm or at room temperature and may be prepared without any crust at all. If you’re using a crust, the recipe will take less time if you have a premade crust.
Zucchini with Dill and Mint
The perfect midsummer dish, one that can be served hot or cold. Convert it to a pasta sauce by tossing it, hot, with cooked pasta, a couple of raw eggs, and some freshly grated Parmesan cheese. Other vegetables you can prepare this way: Any summer squash.
