Fisherman's Soup

(Cacciucco) This seafood soup, called cacciucco (meaning "mixture"), is a specialty of Livorno, a fishing port that is Tuscany's second-largest city. It has been made for hundreds of years, and variations of it appear all along the Tuscan coast. Traditionally, at least five types of fish and shellfish are included (one for each "c" in the name). If you like, do as the Italians do, and place a slice of toasted bread in each bowl before ladling the soup over.

Linguine with Shrimp and Scallops in Thai Green Curry Sauce

This is a great pasta dish to serve for company. Chances are good that you'll find the Asian ingredients— increasingly carried by everyday food shops—at your local supermarket. We used the Thai Kitchen brand, which is widely available.

Fish Terrine

This Basque dish is essentially a fish pâté or pudding, called budíns in Spain.

Pasta with Shrimp, Tomatoes and Garlic

A fusion dish from Phyllis Vaccarelli of Let's Get Cookin', in Westlake Village, California. The flavors are basically Italian, but before cooking, the shrimp are coated with a "velveting" mixture of cornstarch and egg white used in traditional Chinese cooking, which helps keep the shrimp tender. Serve a watercress salad with balsamic dressing alongside. For dessert, construct a sundae with vanilla ice cream, diced mangoes and crushed amaretti cookies.

Hot Cauliflower with Shrimp

Norwegian men have taken to cooking for fun, and this excellent luncheon entrée is from Derek Blixen, manager of the Pan American World Airways Oslo office.

Orange and Roasted Garlic Shrimp Skewers

As accompaniments to this great-tasting main course, serve the Risotto-Style Barley with Spring Greens, and pour glasses of chilled Pinot Grigio.

Grilled Shrimp with Ponzu Sauce

This recipe can be prepared in 45 minutes or less. A popular Japanese sauce perks up the grilled shrimp. For side dishes, garnish purchased sesame noodle salad with chopped green onions and peanuts, and put out a plate of carrot and celery sticks. As long as the coals are hot, grill slices of fresh pineapple, then top them with vanilla ice cream and shredded coconut.

Shrimp Fried Rice

This is an adaptation of the Cantonese classic. In China fried rice is seasoned with salt rather than soy sauce (which darkens the grains). However, a bit of soy sauce for extra flavor is nice.

Pasta Salad with Shrimp, Roasted Peppers, and Fennel

"I run a salon, and I’m an instructor at a cooking school," writes Sandy Ercolano of Ridgewood, New Jersey. "It seems that I’m always in the kitchen. At home I cook meals and come up with recipes for my classes. Of course, my family eagerly tries anything I make." To turn this main-course salad into a side dish or vegetarian entrée, omit the shrimp.

Pumpkin and Shrimp Bisque

Buttery, slightly sweet pumpkin is the perfect mate for the briny flavor of oysters, scallops, or other crustaceans. This soup is made with shrimp, whose shells are turned into an aromatic stock that serves as the soup's liquid. Classic shellfish bisques are thickened with rice, but here pumpkin provides body for the soup. Sage's earthy flavor complements both pumpkin and shrimp and steers the focus of flavor from sweet to savory. This is a satisfying soup to prepare throughout the fall. If you serve it as a first course for Thanksgiving dinner, you might start a tradition in your family.

Shrimp-Stuffed Portobello Mushrooms

Small portobello mushooms are sometimes labeled portobellini or baby portobellos. Pair this dish with a salad and white wine for a light lunch or supper.
