Deep Fry
Lemon-Scented Ricotta and Mascarpone Cream Puffs
Chef Sal Passalacqua of Dimaio Cucina in Berkeley Heights, New Jersey, writes: "My father's family is from Sicily and I spent my teenage years there, so that's where a lot of my culinary influences come from. At first glance, Sicilian cooking seems very simple, but that simplicity depends on using the freshest ingredients and often the combination of sweet and tart flavors. The anchovy pasta and the ricotta and mascarpone cream puffs here are perfect examples."
These can be served for dessert, tea, or brunch. Mascarpone, an Italian cream cheese, is sold at many supermarkets and at Italian markets.
Garlicky Fried Chicken
If your chicken breast halves are large, halve them crosswise. Marinating the chicken keeps the meat moist and imparts extra flavor. Though the recipe says to keep the fried chicken warm, it's equally good served at room temperature. In fact, if you're making this entire menu using a single oven, you'll need to let the chicken stand at room temperature while the squash casserole bakes.
Mom's Fried Chicken
I can't begin to guess how much fried chicken I've cooked in my lifetime! Becaue it was a staple in our home during my childhood, it was a rite of passage for each girl child to learn to fry chicken like the womenfolk.
Carciofi alla Giudea
Fried artichokes have long been associated with the Jewish Ghetto in Rome. Briefly blanching the artichokes makes it easier to bend the leaves outward into the shape of a flower.
Yuca Fries with Chipotle Mayonnaise
If you're making these fries to go with the broiled steak with horseradish cream, as shown below, skip the chipotle mayonnaise and squeeze lemon or lime juice over the fries.
Red Curry Duck Wonton Napoleons
Roast ducks are readily available at Chinese markets and for takeout from many Chinese restaurants. Since red curry pastes vary in heat, we suggest tasting a tiny bit of the one you buy before using it.
Shrimp and Black-Eyed Pea "Croquettes"
If you substitute regular bread crumbs for the panko, the coating will be heavier and the texture denser. In this recipe, the peas are soaked but not precooked before grinding, much like in a falafel.
Cha Gio (Vietnamese Fried Spring Rolls)
When my grandmother, Noi, came to America in 1975, banh trang—Vietnamese rice flour wrappers—weren't available, so the use of wheat wrappers from Singapore and China became widespread throughout the immigrant community. While it's easier to get banh trang these days, Noi still uses the wheat wrappers for this recipe.
Okra Beignets with Cilantro Sour Cream Sauce
Don't be put off by this recipe if you don't like the slippery texture of okra — it disappears when the okra is coated in batter.
Raised Cappuccino Doughnuts with Espresso Cream Filling
While any yeast dough can be kneaded by hand, this one is done in a heavy-duty mixer with a dough-hook attachment — it's the fastest, easiest way to get the best texture.
Use a clip-on deep-fry thermometer to gauge the oil temperature when frying these doughnuts: too low and they'll absorb oil, turning leaden and soggy; too high and they'll burn before the insides are cooked through.
Pumpkin Doughnuts with Powdered Sugar Glaze and Spiced Sugar Doughnut Holes
Use a clip-on deep-fry thermometer to gauge the oil temperature when frying these doughnuts: too low and they'll absorb oil, turning leaden and soggy; too high and they'll burn before the insides are cooked through.
Maple-Glazed Sour Cream Doughnuts with Sugared-Walnut Streusel
The tender texture of these cake doughnuts comes from folding in the dry ingredients gently by hand, rather than beating them in with a mixer.

Croatian Moussaka
Tony Kerum's deliciously satisfying version of Croatian moussaka — featuring potatoes in place of the more traditional eggplant — keeps film crews well fed.

Pooris
Sweet Plantain Fritters
Inspired by American Adobo
In this 2001 film, a group of Filipino-American college friends get together to eat and share stories about their loves and lives. Their experiences of assimilating to American society vary, but all of the characters recognize their need for the comfort derived from friendship and familiar foods.
For this dish, be sure your plaintains are completely black, since the fruit becomes sweeter as it ripens. (Yellow or mottled brown plantains are very starchy and usually take about a week to fully ripen.) Serve these fritters as a snackor pair them with ice cream for a delicious dessert.
Matchstick Potatoes
Pommes allumettes
There are two temptations in this recipe that you need to resist: Do not use a small pot for frying the potatoes — the oil will bubble up and overflow, which is extremely dangerous. And do not try to cook the potatoes in fewer than 6 batches or they won't get crisp enough. Because the timing for this menu can be complicated, we recommend that you make the potatoes ahead. They are just as delicious at room temperature as they are when hot.
