Roast
Roasted Carrot and Beet Salad
For a complete meal, serve this salad with pita bread, feta cheese, and hummus. If you are on a low-sodium diet, substitute a less salty cheese for the feta.
Chopped Beet Salad with Feta and Pecans
We used several varieties of beets, including Golden Globe and Chioggia, for a colorful salad, but you may use any variety you like.
Roasted Parsnip, Celery Heart, and Apple Salad
Celery hearts are the tender, pale-green inner stalks in a celery bunch.
Chestnut Mushroom Soup
For a velvety smooth texture, pass the soup through a fine strainer after the mixture has been processed and before adding the cream.
Basic Beef Stock
Reserve the shredded beef and tomato pieces to make Hearty Beef Stew (recipe above). Refrigerate the stock in airtight containers for up to 30 days or freeze for up to 6 months.
Roasted Carrot Soup
You can make this soup through step 2 the day before your dinner; refrigerate, covered, until you’re ready to finish.
Easy Roast Beef
You’ll be transported back to Grandma’s kitchen when you smell this homey dish as it cooks. The leftovers are excellent for sandwiches and recipes calling for cooked lean beef, such as Vegetable Beef Soup (page 68).
Roasted Lemon-Herb Turkey Breast
Fresh lemon, fresh parsley, and lots of dried herbs tucked between the skin and the meat infuse this turkey with sensational flavors. If there is leftover turkey, you can use it in Turkey Stew (page 167).
Dijon Pork Tenderloin with Marmalade Rice
While the pork roasts in its herb-enhanced Dijon glaze, you can prepare the brown rice flavored with orange marmalade that accompanies it. Steam some broccoli to serve on the side.
Tangy Roasted Asparagus
Just a bit of Worcestershire is all it takes to give zing to this side dish.
Balsamic Beets and Walnuts
Garnet-colored beets topped with a reduction of balsamic vinegar and brown sugar, then sprinkled with cinnamon-sugar walnuts, are a great complement to dishes such as Tarragon Turkey Medallions (page 161) or a simple roasted pork tenderloin.
Roasted Broccoli with Onions
Roasting brings out the best flavor in both the broccoli florets and the onion slices in this side dish.
Roasted Tomato Chipotle Salsa
Spice up lean grilled hamburgers, chicken breasts, or pork tenderloin with this wonderful salsa, which gets its smoky flavor from the chipotle chile. Regulate the heat from mild to spicy by the amount of chipotle you add.
