Piadine con Broccoli di Rape

(Emilia-Romagna Flatbread with Broccoli Rabe) A piadina is baked on a griddle, folded in half, and filled. In Emilia-Romagna, the fillings might include sautéed greens; cold meats such as prosciutto or salami; and semisoft or soft cheeses such as Fontina Valle d'Aosta. Piadine are usually eaten like sandwiches but can be cut into small wedges to serve as a first course.

Onion Puffs

This is one of my favorite hors d'oeuvres. Normally I make them as rounds, but I have learned that you can also make them larger in sandwich form, which works very well. Any way, shape, or form, these simple toasts are the best. The onions and mayonnaise melt together under the high heat of the broiler and taste delicious. They're a great nibble to serve to get your appetite going, and they couldn't be easier to put together. I like to use a sweet Vidalia onion if I can find it.

Grilled Cheese and Kalua-Pig Sandwiches

Wong uses Fontina cheese and includes a slice of foie gras in each of these improbably luxurious grilled cheese sandwiches. At the restaurant, they are served with a Martini glass filled with swirled, chilled red and yellow tomato soups that the waiter instructs you to down in one gulp. Salud!
