Eggplant, Oyster, and Tasso Gratin
You are, no doubt, familiar with the so-called trinity of Louisiana cookery: onions, celery, and bell pepper. Susan Spicer of New Orleans, a self-described eggplant freak who cooks in an internationally inflected Creole style, has honed a new sort of trinity: eggplant, oysters, and tasso.
Here, tasso, an intensely flavored smoked pork of Cajun origin, serves as a seasoning, in the same way that a smoked pig trotter flavors a pot of greens. Although Spicer recommends that you serve scoops of this gratin as an appetizer, consider yourself warned: We have done the same. And no matter what we served to follow, it paled in comparison. Your guests might be happier with a large helping of this Creolized casserole and a salad.

Eggplants in a North-South Sauce
This is one of our most beloved family dishes. It is very much in the Hyderabadi style, where North Indian and South Indian seasonings are combined. Over the years, I have simplified the recipe. Here, you may use the long, tender Japanese eggplants or the purple "baby" Italian eggplants or even the striated purple and white ones that are about the same size as the baby Italian ones. Once cut, what you are aiming for are 1-inch chunks with as much skin on them as possible so they do not fall apart. Serve this hot with meat or vegetable curries, rice, and dal or serve it cold, as a salad, with cold meats, Indian (see Chicken Karhai with Mint) or Western. I love it with slices of ham.
Grilled Lamb Spiedini with Eggplant, Red Bell Pepper, and Arugula Salad
Spiedini ("skewers" in Italian) refers to this dish at Frasca Food and Wine involving meat, seafood, or vegetables roasted or grilled over a fire. Instead of lamb shoulder, you could buy about 21/2 pounds boneless leg of lamb to trim and cube for the spiedini.
Grilled Summer Vegetables with Harissa Dressing
The veggies are great at room temperature, so grill them a couple of hours ahead, if you like. Cooking them ahead also frees up room on the grill for whatever meat youre grilling (lamb would be delicious with the vegetables).
Grilled Marinated Eggplant
Marinated eggplant makes a great antipasto, alone or as part of a larger spread. It also works as an accompaniment to grilled meat and fish. However you serve it, I strongly suggest you make sure to save enough for a sandwich. Country bread with grilled marinated eggplant, prosciutto, and mozzarella—really, really good.
