Marinated Peppers and Eggplant

Part of what makes these marinated peppers and eggplant so delicious is the involved process they go through to get to their seemingly simple final state. In her book, The Zuni Cafe Cookbook, Judy Rodgers suggests that the chef’s eternal quest is to make the simplest process more difficult: “Stop, think, there must be a harder way,” she writes. There are easier ways to make peppers and eggplant, but once you taste this version, it’s hard to go back. If you like, make them the day before and let the vegetables marinate overnight.

Dad’s Steakhouse Salad: Early Girl Tomatoes, Red Onion, and Roquefort

My father hated salad. I remember him saying, “The only salad worth eating is one with green beans and foie gras, because it’s not all mucked up with lettuce.” And yet, somehow, I grew to love salads, especially the kind with leafy greens. This lettuce-free, classic steakhouse salad, made with first-of-the-season Early Girl tomatoes, sweet young red onions, and slabs of potent Roquefort, is a tribute to my dad, who I know would approve.

Yellow Tomato Gazpacho

This recipe was developed by Julie Robles, longtime Lucques cook, then souschef, then chef de cuisine. It’s one of those magical recipes in which you combine a few simple ingredients and end up with an unexpectedly dramatic result. It’s a foolproof recipe, but, tasting it, you’d never know how easy it is to make. As long as you have a blender (it doesn’t work as well in a food processor) and really great tomatoes, this refreshing gazpacho is a guaranteed crowd-pleaser.

Wild Salmon à la Lutèce with Sweet Corn, Green Cabbage, and Brown Butter Vinaigrette

André Soltner is one of my culinary heroes. I admire his interpretations of regional dishes from his Alsatian homeland, which are refined enough to serve in one of New York City’s fanciest French restaurants yet still true to their humble origins. Only a great chef can strike that balance. I discovered his recipe for salmon sautéed in a bacon-and-egg “batter” and served with a brown butter sauce in the middle of summer, so I added corn to the sautéed cabbage for a sweet seasonal touch. The tart brown butter–vinegar sauce beautifully balances the smoky bacon and rich salmon.

Wild Striped Bass with Farro, Black Rice, Green Garlic, and Tangerine

The first incarnation of this dish did not include rice. Tasting it over and over again, I knew it needed a final element that would bring its flavors into harmony: nutty farro, meaty bass, pungent green garlic, sweet pea shoots, tart tangerines. I racked my brain for just the right thing, then remembered a sample of black rice I had stashed in my desk drawer weeks before. I had little experience with black rice—varieties of rice whose kernels are covered by extremely dark bran. The black rice I found was grown in the salt marshes of the Veneto, so I cooked it in an Italian style. As I would for risotto, I sautéed the rice in olive oil to seal the outer layer and toast it slightly. Then I deglazed with white wine, added water, and let it simmer away. When the rice was done, I found it solved my problem perfectly. The rice’s marshy origins gave it a subtle oceany taste, complementing the fresh fish and giving the entire dish a springtime-by-the sea coherence. What’s more, there was a visual bonus: the black rice was gorgeous to behold, coated in its own deep purple sauce.

Swiss Chard Tart with Goat Cheese, Currants, and Pine Nuts

Look in any Sicilian cookbook and you’ll find a recipe for the popular side dish, or contorno, of cooked greens with currants and pine nuts. I make Swiss chard the main attraction of this dish, layering it onto a savory tart with rich and tangy goat cheese, then topping it with sweet currants and toasted pine nuts. Use a crumbly, slightly aged goat cheese, such as Bûcheron, Rodin Affiné, or the domestically produced Laura chanel aged chèvre. Feel free to substitute any other tender greens, such as the tops of beets or turnips, or a bunch of young mustard greens for the Swiss chard.

Sweet and Sour Cabbage

Served under Soy-Syrup Roasted Duck (page 142), this super-tender cabbage perfectly balances the richness of the meat. But I love it so much, I eat it on its own, too. As always with fresh cabbage, I add the juniper berries at the end to lightly perfume the dish.

Creamy Onion Tart

For four generations, the Vongerichten family has been turning out this tart, which is like a quiche but creamier.

Warm Alsatian Potato Salad

This is the type of salad my mom used to make—unfussy and delicious. It’s best with fresh spring potatoes and onions, but it hits the spot any time of year. While I love drinking dry white Alsatian whites, I enjoy making this salad with a good Sancerre.

Apricot Chutney

A dollop of sweet-tart chutney is a nice way to dress up both spicy curried and mild grain and bean dishes.

Spanish Bell Pepper Sauté

Summer is the prefect time to make the luscious Spanish classic, piperade, when peppers of all colors are abundant and, for a short time, relatively inexpensive. This is a great partner for almost any sort of pasta or grain dish, hot or cold, or to serve alongside a summertime sandwich. Use leftovers in wraps.

Warm Potato and Black Bean Salad with Red Peppers and Artichokes

Potatoes and black beans synergize nicely in this offbeat salad. The liquid from the artichoke hearts provides plenty of flavor.

White Pizza with Sweet Potato and Caramelized Onions

I’ve suggested in the box on page 141 that most of the pizza recipes in this chapter double easily if you need more servings, with the exception of this one. This is only because it would take an awfully long time to caramelize four large onions. Not that this can’t be done, but it wouldn’t be a particularly quick meal. However, if time is not an issue and you have a nice large pot for the onions, be my guest and make two of these amazingly delicious pizzas.

Vietnamese-Style Bean Thread Noodles

A pleasing composition using a minimum of exotic ingredients, this traditional Asian dish becomes somewhat offbeat through the use of fresh tomatoes and basil.

Stewed Lentils with Soy Sausage

Spicy Tofurky sausages make a bold statement in this easy lentil stew. If you can find beluga lentils, use them—they give this dish extra visual appeal.

Seitan and Mushrooms in Paprika Cream

I adore Paris. When I need to assuage my longing for this lovely city, I serve my family assiettes (referring to a generous platter of a number of components) like those typically served in the city’s vegetarian restaurants. The menus of these restaurants are not as extensive or innovative as those in the United States or Britain, but they do offer delicious, fresh food prepared with French flair. Seitan is a common offering. This one is an amalgam of seitan dishes I enjoyed at Le Potager du Marais, near the Georges Pompidou Center, and Les Cinq Saveurs D’Ananda in the Latin Quarter. Szechuan-Style Tofu with Eggplant

This recipe is based on one of my favorite Chinese take-out dishes. The problem with the restaurant version is that it is often rather oily. I’ve devised this low-fat version as a way to satisfy my craving for it.

Thai Tofu with Pineapple and Veggies

This is a nice change of pace from more common soy sauce–flavored stir-fries, but it’s just as quick and every bit as delectable. Don’t be alarmed by the ingredient list, which is relatively long compared with those in most recipes in this book. It really is a quick dish, and with such an array of healthy components, you’ll need little else to make a satisfying meal.

Thai Steamed Green Garden with Coconut-Peanut Sauce

Offering an attractive presentation of steamed fresh veggies, this is a nice change of pace from stir-fries. It’s a fresh-tasting meal that gets its personality from a luscious sauce.
