Herb Garden Salad

Alain Passard is the chef-owner of the Parisian restaurant L’Arpège, awarded three Michelin stars, the highest possible rating from the most prestigious organization. He caused quite a stir when he “went vegetarian,” as he had come from the classic French tradition of cooking with meat stocks. This salad is inspired by a dish he created when he entered his veggie phase. This is well suited for cooks who grow their own herbs or are able to purchase good quality fresh herbs from their farmer’s market—otherwise, it can be somewhat costly at a traditional grocery store. Rinse the herbs under cold running water, then spin them dry in a salad spinner. Carefully remove the leaves from the stems (don’t cheat: use only the leaves, discard the stems). Use more herbs than lettuce. Nasturtiums (both leaves and flowers), cilantro, basil, and chervil are other herb suggestions.

Mama’s Potato Salad

Russet (also called Idaho) potatoes are not usually recommended for potato salad. They can become waterlogged when boiled and fall apart easily. Their high-starch, low-moisture content makes them inclined to absorb too much dressing. But that is the beauty of this dish. This is the archetypical summer potato salad that has been served on paper plates across the country for generations. When Mama prepares this salad, she lets the potatoes cool just enough, but not completely. The cubes break down slightly and the salad is a blend of larger pieces of potato with a little bit of creamy mash. This is one of my sister’s favorite dishes, a comforting classic that echoes with childhood memories whenever Mama makes it, so she always makes a big batch. The recipe halves beautifully.

Heirloom Tomato Salad with Goat Cheese

No salad screams “summer” louder than this one. The combination of tomatoes with freshly chopped herbs is a testament to my philosophy of simple recipes executed with the best possible ingredients. Heirloom tomatoes are grown from non-hybrid, open-pollinated seeds, and are the varieties that have been passed down through the generations by farmers and gardeners around the world. They are far superior to the red-colored tennis balls available in most grocery stores. If you cannot find heirloom tomatoes, use a ripe tomato from your garden, a good produce market, or a farmer’s market. Be sure to look for a regional goat cheese and support your local farmer. Other cheeses to consider for this recipe include briny cubes of feta or mild, creamy fresh mozzarella.

Heart-Healthy Cole Slaw

My friend Shelly shared this recipe, her aunt Mimi’s, at a cookout one summer. It’s lighter and healthier than most, and since it is essentially vinegar and oil, it is safe to have on a buffet for hours.

Roasted Beet Salad with Walnuts and Walnut Oil

These beets are roasted, and very delicious! But if you have a mandoline, a professional tool that will slice vegetables evenly and very thinly, skip the roasting process and slice the beets raw (this works only with beets at the peak of seasonal freshness—sweet, dry, and tender). When really fresh beets are sliced so thin as to be almost shaved, there is no need to cook them. Toasted walnut oil adds a classic French flavor to the salad, but you could also use almond or pecan oil, available online and at gourmet or specialty markets. Store nut oils in the refrigerator; they turn rancid fairly quickly.

Carrot and Beet Salad with Lemon Vinaigrette

We bought my grandmother a food processor, but she continued to use her hand-cranked shredder for grating. Made of cast aluminum, it was a sturdy beast that attached to the counter with a vise. She would peel the carrots and Dede would patiently shred them into a large bowl for carrot slaw. This recipe is a bit more complex in flavor and technique than Meme’s, and I use a food processor to shred the vegetables. Just make sure you shred the carrots first! To prevent the beets from staining the carrots when mixed in the salad, the key is to dress the beets before combining with the carrots. This seals in their red pigments (betalains), which don’t dissolve in oil.

Celeriac Slaw

Céleri rémoulade—shredded celeriac (celery root) in a mayonnaise-based dressing— is the French version of slaw. Peel a celeriac bulb with a chef’s knife, trimming away the gnarled brown skin to expose the pale flesh. Once peeled, it should be rubbed with lemon or soaked in acidulated water to prevent browning.

Vegetable Slaw with Creamy Asian Dressing

Except for the mayonnaise, this Asian-inspired slaw is very un-Southern. The combination of flavors and colors makes a grand addition to any summer picnic. Mirin is a sweet, low-alcohol rice wine, essentially “cooking sake.” Believe it or not, soy sauce actually did make it into Meme’s kitchen. She was once featured in an article in the local newspaper, and, I suppose, thinking her simple country recipes were not appropriate for the “big time,” she included a recipe for her stir-fry. It was a combination of broccoli, carrots, and snow peas, with soy sauce as a seasoning. The recipe might have been “exotic” back then, but Meme’s stir-fry technique was pure South: the vegetables cooked for a very un-stir-fry length of time—20 minutes!

Arugula with Roasted Pears and Goat Cheese

Not that long ago, for most of America, “cheese” meant pre-sliced singles wrapped in plastic, or insipidly flavored orange wheels produced in America’s heartland. Any cheeses considered “gourmet” were imported from Europe. Fortunately, artisanal cheesemaking is now thriving all over the country, including the South. I love the fresh goat cheese from the Wehner family’s Green Hill Dairy and Sweet Grass Dairy in Thomasville, Georgia. Their cows and goats roam freely in the woods and graze in lush, green pastures. This idyllic existence, the family maintains, makes them so content that they produce the most delicious milk, which, in turn, makes the best cheese. Sweet, roasted Bosc pears, tender baby arugula, and mild creamy goat cheese make this simple, elegant salad sing.

Classic Cole Slaw

There are three kinds of Southern slaws: barbecue slaw, cole slaw, and yellow slaw. Barbecue slaw is a western North Carolina tradition made with chopped cabbage, pungent vinegar, and red pepper. Cole slaw is what most people in Georgia consider slaw—primarily cabbage and mayonnaise. Yellow, or mustard, slaw is more commonly found in South Carolina and eastern North Carolina (its main ingredients are cabbage and mustard). Try a spoonful of this slaw on Pulled Pork Sandwiches with Mama’s Barbecue Sauce (page 81) for a sloppy, glorious treat.

Black-eyed Pea Salad

I like to serve this salad with vinaigrette, as here, or lightly moistened with a dollop of homemade mayonnaise (page 282). (I seem to have some sort of primal need to combine tomatoes with mayonnaise.) The truth is, this salad really reminds me of how a plate of food looks toward the end of a summer meal when all the vegetables and flavors swim and mingle together. This salad can be served as is, in lettuce cups, or as a side dish for grilled or fried chicken. Regardless of how you serve it, all of the vegetables should be chopped approximately the same size so each bite is evenly mixed.

Meme’s Ambrosia

No holiday in our family would be complete without this refreshing fruit salad. My grand-father Dede would patiently grate the fresh coconut on a box grater, also put to use for the obligatory coconut cake. My sister, Jona, would sit, fidgeting, on the stool in the kitchen waiting for a sip of the coconut juice. Once the coconut was grated, Dede would peel and segment enough oranges to make gallons of this exquisite concoction. Although Dede did all the work (with a little help from Jona), I’ve named this dish for Meme, because she loved it and he made it for her. Use this simple recipe as the starting point for creating your own version. Always use fresh coconut, not flaked, canned, bagged, or frozen.

Braised Onions with Raisins and Almonds

Braised onions with raisins and almonds is a Spanish-inspired dish from the southwestern border of the United States. It makes a sweet topping for rice or side to any barbecued meat.

Warm Corn Pudding

The sugar in corn begins to turn to starch as soon as it is picked. So, to get the maximum flavor for your corn pudding, use very fresh corn, preferably picked the same day, or a high-quality frozen product. Serve alongside any kind of grilled meat, especially lamb, or with a simple salad for lunch.

Wild Rice and Black Walnut Pilaf

So-called wild rice is actually a grain that grows in the Great Lakes region and has been harvested by the Ojibway and Cree Indians for centuries. Because of how long it takes to cook, wild rice is perfect for the slow cooker. Black walnuts, native to the central and eastern United States, have a very different flavor than English walnuts, though the garden variety English walnut can be used in a pinch.

New England Baked Beans

Caramelized winter fruits atop these beans make for a wonderful variation of this traditional New England side dish.

Stewed Tomatoes

In the South, a Blue Plate Special was historically a quick and inexpensive meal for travelers served on popular Blue Willow china. The term came into common usage in the early 1900s at diners, where it was used to refer to the special of the day. Serve stewed tomatoes as a side to your own Blue Plate Special, such as fried chicken or chicken-fried steak.

Spanish Rice

Exactly what makes this rice Spanish has never been clear, but with this collection of tasty Tex-Mex ingredients, it is clear why it’s such a delicious dish. It also easily becomes vegetarian if you omit the shredded meat and stock. Please note that rice prepared in the slow cooker will not retain the shape and individuality of each grain as it would in a rice cooker.

Southwestern Cornbread Pudding

This bread pudding is savory, not sweet. A melding of the delicious southwestern flavors of corn, chiles, coriander, cumin, and cheese, it makes a wonderful side dish to a roasted loin of pork or beef.

Roasted Chiles, Onions & Tomatoes

Roasting—or rather toasting—vegetables is one of the most important techniques in Mexican cooking. Because the roasting is done on the stovetop and not in the oven where the vegetables can steam, the flavors developed are very deep. Make sure to include some charred pieces of vegetable skin—they will add an incredible smoky flavor to your recipes.
