Pork, Piquillo, and Cheese Canapés

You can use leftover pork (or any meat, really), for these canapés, because its flavor is not the most important thing here. What is important are the piquillos and the manchego. Without these the dish has no authenticity. That said, this is a great basic recipe combining meat, cheese, and pepper, and you can substitute for any of them—I especially like this with a bit of chorizo and a strong blue cheese. If you start with raw pork tenderloin, cut it into 4 slices and brown it in a little olive oil in a nonstick skillet over medium-high heat for about 3 minutes per side.

Piquillo Peppers Stuffed with Fish

Piquillos have so much going for them. Not only is their color stunning, their skin thin, and their flavor a near-perfect blend of sweet and hot, but one couldn’t bioengineer a better shape for stuffing. To precook the fish, simply put it in salted water to cover, bring the water to a boil, and turn off the heat. By the time the water cools, the fish will be done.

I first had this appetizer as street food, near a market in Bangkok. The combination of raw ingredients normally used as flavoring agents for cooked dishes was intriguing and refreshing. The betel leaf used to hold everything together gave an additional bite to the dish. Betel leaves are impossible to find here, but the dish remains delicious with spinach leaves or even lettuce. If you’re not familiar with Thai fish sauce (nam pla), see page 500. You put it all together at the table, so it’s kind of fun. Serve this as the start to any meal featuring other food from Southeast Asia.

Fried Peanuts

Fried peanuts will amaze your guests with their crunch and fresh, distinctive flavor. Add different kinds of nuts if you like, as long as they are “raw” to begin with (the industrial shelling process uses enough heat to cook the nuts, at least a little bit). The best raw peanuts are usually found in the fall (peanuts are an exception; the best season for other nuts is spring), when they are fresh and tender. Like any nuts, these are great with drinks, especially beer.

Guacamole

In Mexico, guacamole is traditionally made in a molcajete, a mortar made from volcanic rock. It’s a lovely tradition, but since you probably don’t have a molcajete, use a bowl and fork or a potato masher. The admittedly more complicated variation that follows is superior but not nearly as quick.

Paletas de Mango Enchilado

My brother Pedro loves anything with mango and chile, and he’s not alone. It has become one of the most common combinations in sweets in Mexico; in fact, when you eat fresh mango, powdered chile of some kind is always on the table. I wanted to do something in this book just for him, but I am sure he won’t mind sharing (that’s the kind of guy he is). The chile powder you use is a matter of taste. It isn’t just about the heat; it’s also about the flavor. I particularly like the piquín chile from Oaxa ca, but feel free to substitute it for ground guajillo, chipotle, or your personal favorite.

Nieve de Pepino

Sliced cucumbers mixed with salt, lime, and chile are often eaten in Mexico as a snack and are even sold at movie theaters. I was about thirteen when I first tried this combination as a sorbet on a warm day in Cuernavaca. Well, this time the flavor of the cucumber was heightened with a little sugar, and the sorbet was topped with a mixture of chile and lime. I’ve included the chiles in the sorbet itself, by infusing them in the syrup; however, you can always sprinkle some powdered chile on top after it has set.

Pelliscos de Tamarindo Acapulqueño

As my friend Josefina says, we Mexicans love two kinds of sweets: the really over-the-top sweet, sticky ones that make your teeth ache, and the tart-spicy ones that make your mouth pucker, scorch your palate, and make the tip of your tongue salivate. Many of these latter kinds are made with tamarind. This recipe is one that most people think of when it comes to dulce de tamarindo. They are sold along the highways and beaches of Acapulco. Even when they are mixed with sugar, they remain tart and acidic; however, I have included an option for adding citric acid for those who really want an extreme puckery sensation. These tamarind balls have seeds in them. You can make them without the seeds, but it’s a little extra work (however, I don’t think you’ll mind sucking the seeds, trying to get all the tasty candy off).

Cranberry Chipotle Relish

GINA This is not your off-the-shelf variety of cranberry sauce, although that can work in a pinch (remember my emergency run to the store during my first Thanksgiving at Mama Neely’s?). In this recipe I’m talking sweet, zesty, spicy, and savory: you don’t know whether to slow-dance or cut a jig. I say mix it all up, just like the relish, and let it go.

Beer-Braised Brisket Chili

GINA I can hear “It’s a Man’s World” by James Brown playing whenever I make this chili. But beer, bacon, and brisket are three of my favorite “b”s, too. So don’t be scared, ladies—this delicious chili will please the whole family, not just your quarterbacks. As with most stews and chilis, this is best made the night before, and reheated right before the big game starts!

Seven-Layer Dip

Since Labor Day is a holiday when most are off work, people are always stopping by the Neely house, and we’ve got to have something at the ready for our guests to munch on. This seven-layer dip is absolutely beautiful as well as flavorful, a great item to set up to get the party started!

Fresh Mango Salsa and Homemade Tortilla Chips

GINA My attraction to mangoes was confirmed on a trip Pat and I took to Mexico. The velvety fruit tastes like an exotic mix of pineapples and peaches, and the flavor just explodes in your mouth. In creating this salsa, I stuck with Mexican tradition and added fresh cilantro, which you can chop or tear apart. Cilantro also offers a health benefit by soothing the digestive system. So, little do the guys know, I’m taking care of their stomachs as well as their appetite! (Ladies, y’all can thank me later.) Mind you, I was a little skeptical about whether they’d go for it, so I deep-fried the tortilla chips, so they’d have something familiar to dip.
