Potato Pancakes
When I suggested potato pancakes for this chapter, my mom questioned whether college students would own blenders. I foolishly said, “Even the guys next door who have one fry pan and eat with plastic silverware have a blender.” I quickly added, “You know, to make smoothies.” I don’t think she bought the smoothie thing, but the recipe stayed. These crispy potato pancakes are a yummy dinner plain or with applesauce or sour cream.
Chicken Curry
This is a delicious low-fat version of a standard curry dish. You might think that low-fat means you won’t be full, but with all the potatoes and chicken in this easy-to-prepare meal, even big eaters will be satisfied. Curry can be a refreshing change especially if you’ve gotten stuck in a culinary rut.
Meatloaf with Scalloped Potatoes
Meatloaf is one of my dad’s self-professed specialties. He will spend an hour putting it together, and I swear he adds a pinch of just about every spice in the cabinet. Here we have narrowed down the list substantially, but it is still every bit as good as his. Sorry Dad.
Potato Chip–Crusted Whitefish with Potato Wedges
Here I go again: I am not a big fan of fish. Okay, the truth is, I won’t eat most types of fish. However, I really do like it when it is made this way, and it’s even better with the tartar sauce on it. I mean how can you go wrong with potato chips? This is a super simple dish to make. Just make sure the potato chips get pretty finely crushed, or they will fall off when you take the fish out of the pan.
Chicken Schnitzel with Fried Potatoes
When I was an exchange student, my German host mom made “hooner schnitzel” every day for my host dad’s lunch, but my favorite part was always the brat kartoff (fried potatoes), and the crispier, the better. This is truly a German dish that is served in almost every restaurant. You can also make Wiener schnitzel (veal) and schnitzel vom schwe (pork) the same way.
Chicken and Dumplings
Chicken and dumplings is a great cold-weather dish. When we lived in the Midwest, we would always have this after a day of sledding or building snow forts, but when we moved to Arizona this tradition became a problem. Now when I want chicken and dumplings, I turn down the air conditioning, close the blinds, and pretend it’s snowing outside (if I don’t close the blinds, the palm trees kind of ruin the effect).
Sweet Potato Ice Cream with Maple-Glazed Pecans
I’ve spent many a summer night enjoying an ice cream cone, flanked by Mexican and Filipino families, at Mitchell’s Ice Cream in San Francisco’s Mission District. This ice cream is inspired by ube, the sweet potato ice cream they serve up in addition to all the other exotic flavors they offer. Mitchell’s is so popular that the place is just as packed when the inevitable summer fog rolls in and chills things down as it is when the sun is shining. There’s always a line. But don’t think for a minute that the flavor of this ice cream is too adventurous. Imagine a nice slab of spiced pumpkin pie; this ice cream delivers that classic flavor in one neat scoop of ice cream. The best sweet potatoes to use are a vivid, electric orange. I try to find the brightest orange ones when shopping. Don’t tell, but sometimes I scrape a bit of the skin off one, just to check.
Tangy Spiced Potato Dumplings
A favorite Indian snack, batata vada are thinly coated by a batter made with garbanzo bean flour, which fries up crisp and then settles into a delicate chewiness. Inside, the cheery yellow potato filling (colored by turmeric) speckled by mustard seed bursts with flavor from chile, ginger, lime juice, and fresh herbs. Each one is a small eating adventure in trying to parse the individual elements while enjoying the synergistic whole. You can make the experience more fun with plops of chutney. Called bondas in Southern India and batata vada in Northern India, these dumplings are beloved all over the country. In Bombay, they are shaped as patties and served in a bun as a hamburger-like sandwich called vada pao. Garbanzo bean flour (called bésan in Hindi) is available at Indian grocery stores and health food markets. It has numerous uses in Indian cuisine, as a thickener as well as in batters for fried snacks.
Sweet Potato, Shrimp, and Lemongrass Dumplings
Soft and somewhat elastic on the outside, this Malaysian morsel contains a spritely filling of dried shrimp, shallot, ginger, lemongrass, chile, and grated coconut. After I tasted my first one in Kuala Lumpur, I quickly learned to say “choo-choo ba-dah” like a local so that I could buy them from street vendors whenever possible. Use the yellow-fleshed sweet potatoes with pale skin because this variety has a lower moisture content and will yield manageable dough that is not too sticky. For the dough, I have provided a range so that you can make dainty or moderate-size dumplings. To determine the amount of flour, use the original weight of the sweet potato. If it weighs 3/4 pound, use 3/4 cup (3 3/4 ounces) of flour. A 1-pound potato requires 1 cup (5 ounces) of flour. Whole unpeeled shrimp traditionally crown the dumpling, but modern versions sold by vendors often lack them. If you opt for the charming old-fashioned topping, purchase shell-on white shrimp (not tiger shrimp) which have edible, thin shells; they are sold at Asian markets.
Potato and Lamb Curry Puff Filling
One of the most common curry puff fillings features well-seasoned potatoes and a little meat. I like to use ground lamb because it pairs terrifically with the bold spice blend that Malay cooks often identify as meat curry powder. I’ve broken it down for you here, but feel free to substitute 2 1/4 teaspoons of your favorite curry powder (if salt is already in the powder, add salt to taste only after the filling is done). For a vegetarian rendition, omit the meat and increase the potato to 3/4 cup, adding extra water as needed during cooking.
Spicy Potato Samosas
Bite into a freshly fried samosa, and you’ll realize that the quintessential Indian snack is no simple food. When made well, the crisp shell is delicately rich and flaky. The filling inside varies, but a tangy potato mixture is the most common. Many believe that samosas arrived in India via the ancient trade routes that linked West Asia with Central Asia and South Asia. In fact, related pastries are called sanbusak in the Middle East and samsa in Central Asia. Samosas are fabulous alone or with a dab of mint and/or tamarind chutney. Add some chai tea, and you have a perfect snack. Or serve them with a salad for a great lunch. Many cooks use russet (baking) potatoes, but I prefer Yukon Golds for their flavor and cheery yellow color. Choose potatoes of the same size to ensure that they’re done at the same time.
Beef, Sweet Potato, and Raisin Turnovers
Like fried lumpia (see page 87), these savory-sweet turnovers are beloved Filipino snacks. Empanadas in the Philippines are usually deep-fried, as they are in other places, such as Argentina, where the Spanish pastry has also been adopted. Filipino-American cooks, however, mostly wrap theirs in a short pastry crust and bake them, with delicious results. If you’ve never had Asian pastries like those in this section, this is a good one to start with because it is easy to prepare and love. For richer, deep-fried empanadas, swap the filling below for the one used in the Shrimp, Pork, and Jicama Turnovers (page 118) or Curry Puffs (page 125) recipe. Feel free to substitute other ground meat for the beef.
Moussaka with Artichokes, Tomatoes, and Potatoes
Moussaka is a quintessential Greek dish, and one that every American knows. Usually a delicious dish of layered eggplant, ground beef or lamb, tomatoes, onions, and, best of all, a thick custard topping, moussaka is one of my personal favorites. This version calls for only vegetables, a not-uncommon variation found in rural Greece. It does well in the slow cooker, but may be just a bit juicier than if baked in an open casserole dish in the oven.
Potato, Artichoke, and Mushroom Stew with Kalamata Olives
The ingredients in this simple vegetable stew are made to order for the long, slow heat of the communal oven or the slow cooker. Flavors meld, juices blend together, and the whole thing is a fragrant, pleasurable afternoon’s work.
Scalloped Potatoes Auvergnats
Few countries do potatoes and cheese as well as France and Switzerland. Raclette, scalloped potatoes, pommes de terre dauphinoises, whipped, or whatever, a couple hundred years of potatoes and cheese and a knack for cooking have made them experts at the many comforting ways these two inexpensive, favorite ingredients can be combined. The Auvergne is a region in south-central France known, among other things, for its popular blue cheese called Bleu d’Auvergne.
Potatoes and Peas in Red Curry Sauce
Thai curries differ from northern Indian curries in that they add some typically Thai ingredients, such as dried red chiles, onion, garlic, coconut milk, galangal, lemon grass, and kaffir lime, to the warm Indian spice blends. They are categorized as red, yellow, or green based on the kind of chile or ingredients used in them (but not necessarily by the color of the finished product), and they have an element of sweetness to them that is lacking in some Indian curries. They can be made from scratch, but most Thai home cooks today rely on either commercially prepared pastes or pastes prepared by a vendor down the street. Many supermarkets in the United States carry Thai curry pastes. And if you really want to save time, you can purchase a jar or two of Thai Red Curry Simmer Sauce (Whole Foods and Trader Joe’s are two good bets) and save yourself the trouble of doing any mixing at all! Most Thai curries, including this one, should be served with steamed rice.
Soy-Braised Potatoes
Wherever they are grown around the world, potatoes fill the belly and warm the heart. Although potato dishes are less common in Asian countries than in Western and Eastern European countries, they can still fill the belly and warm the heart, Asian style. A crisp green salad would make a fine accompaniment to the dish.
Rustic Potato and Poblano Gratin
Potatoes and chiles are “New World” stuff, and yet, as it turns out, they have nourished millions of people around the world since they were brought to the “Old World” by European explorers just a few hundred years ago. Here is a simple dish combining the Old World and New World ingredients, stewed together in the pot—in this case, the slow cooker. Unlike conventional scalloped potatoes baked in a gratin pan, where “design” matters, I recommend gently stirring these potatoes once or twice during their cooking time to evenly distribute the good stuff and ensure even cooking.
Vegetable Amarillo
Amarillo means “yellow” in Spanish, and it is also the name of one of the seven classic moles, or sauces, from Oaxaca, known as “The Land of Seven Moles.” Though far from yellow (it’s more of a brick red), it can be used as a base for a delicious and very spicy vegetable stew that can stand alone or be served over rice to cut its heat.
Minted Potato and Chickpea Curry
This potato and chickpea curry, with its coconut milk and sugar, is more characteristic of southern Indian cooking than northern. The chickpeas themselves take a nice, long cook, while the remaining ingredients are added about an hour before serving.
